honestly that is the most impressive speedrun ive ever seen, in any games - especially that last air drop on the dragon

I've seen lots of MC speedrunners rush the dragon like this and I still don't know how the fuck you find this kind of stuff out and how you pull it off this quickly. Seems like I've become the washed up boomer
The strat to kill the Dragon at the end is called a Zero Cycle. It’s like the One Cycle, but instead of waiting for the Dragon to perch once, you take the beds to the dragon while it’s still in the sky.
When the runner first enters the End they have to see which pillar the dragon is flying over, and pearl to the top of it. Every pillar has a different building setup that depends on how tall it is, and the runner has to memorize all of them because they never know which one they’re going to get in a real run.
If you get really lucky with the dragon perching, then a One Cycle will be faster, but a Zero Cycle will take ~50 seconds every time if the runner is able to kill the dragon with just 5-6 beds.
The Zero Cycle is way harder, but it’s usually faster, and top runners prefer it because it makes the fight mostly about skill instead of just luck.

Stairway to heaven strat seems insanely good, why doesn’t everyone do that to ensure a timely perch?

zero cycles are difficult to perform consistently and ussually require you to get anchors from trades
Skill issue
Well, first, it's not a perch at all. But I know what you mean.
Without trying to write whole paragraphs about it, not all ends can be zero cycled even hypothetically, and not all players can manage it on all possible ends (since the difficulty of different zero cycle setups varies widely). On top of that, you need more health and more materials for a zero cycle than for a one cycle. Explosives being the most notable, since a 5 bed zero is harder than a 4 bed one cycle, but also pearls, blocks and sometimes food. So sometimes, as in the previous WR, the player just can't do a zero cycle even though the end is fine for it.
Finally, the fastest one cycles are actually faster by about ten seconds than a typical zero cycle (just rather rare). And zero cycles require a small amount of pre-end setup on top of that (well usually; a few players can pull off setupless occasionally). So there is a world where a player might be fully capable of going for zero, and the end suitable for it with the materials that they have, but they choose to play for the high roll anyway since the one cycle high roll would reach their time goals while a zero cycle wouldn't.
There's a few other nuances, but I think that's most of it. Of the fastest 7 or so runs right now I think three are zero including the WR, two attempted zero and had to bail to a one cycle, and a couple (including the former WR) didn't attempt it.
Stairway to heaven strat only works in 60% of cases since you need a certain tower layout.

It's called mapless buired treasure, you use the pie chart to see which chunk has the most chest lag on a beach and there'll be a buried treasure at 9,9 in the chunk

that's not how it works, by the way - there's a strat called "fastloot" where you essentially trick the game into thinking you've double clicked and shift clicked on an item at the same time, sticking all of the items of that type into your inventory.
while holding shift, and hovering over the item, you hotkey click hotkey click in quick succession.
