Binubudan - self made fermented rice/ rice wine dessert authentic Ilocano/Szechuan food - 自制酒釀

  • Binubudan or Binuburan, Binurburan, as they say in my province. 自制酒釀 in its Chinese or Szechuan equivalent. It is rice wine dessert, another flavour from my Pangasinan (Szechuan, Vietnamese, or Thai) here on Channel Juan. It is a self made fermented sticky rice & rice wine from scratch , which is used in many Chinese, Thai, Vietnamese and Pangasinanse traditional desserts. The rice wine is sweet and full of flavour, which is a nature additive for many pastries.
    I'm making something so basic from scratch from very simple ingredients, just cooked rice, yeast balls and some sugar.
    I will be splitting the batch; the first half, I prepare using the traditional yeast balls, one ball per one kilo of rice. The second half, I use ordinary yeast, the yeast used for baking breads. Let us see if that works.
