Special Hardinera/Everlasting recipe/ Filipino meatloaf

  • Hi Everyone. I have here this delicious Philippine dish called Hardinera. It is our version of meatloaf. This dish is mostly seen during fiestas, christmas and special parties. The original recipe does not need sauce but this will make your hardinera extra delicious and gives you a nice presentation. Hardinera can be served either warm and cold.
    Ingredients:
    .1/4 cup oil (59 ml)
    .1 kilo ground pork (with a bit fat so it wont be dry)
    .3 medium chopped yellow onions (314g)
    .1 small head garlic (33g)
    .2 1/2 teaspoons salt
    .1 teaspoon black pepper powder
    .1/8 teaspoon chili powder
    .2 tablespoons tomato puree
    .1 medium carrot (124 g)
    .1 small red bell pepper (100g)
    .1 small yellow bell pepper (64 g)
    .1 small green bell pepper (100g)
    .1/4 cup tomato ketchup (58 ml)
    .1/2 cup tomato sauce (112 ml)
    .125 g diced ham or hotdog
    .1 cup pineapple chunks (165 g)
    .6 tablespoons raisins
    .1/4 cup pickles (71 g)
    .4 big beaten eggs
    .100 g grated cheese
    .1/2 cup bread crumbs (59 g)
    For the sauce:
    .1 cup pineapple juice
    .4 cloves
    .1 tablespoon brown sugar
    For garnishing:
    .Pineapple
    .red bell pepper
    .carrot
    .green peas (frozen)
    .leeks
