    Looks great.
    I’m also not a fan of brines. Often I feel like it can also make the meat texture a little mushy.
    We tend to cook our turkeys with Ina Garten method and it comes out great but the back side is a little soggy because it sits in some wine.
    We also put butter under the skin before we start cooking.
