I have been cooking using the offset since I’ve had it but this morning I started the pit cold at 75 with just the pellet function. Got to 275 in and hour and fifteen which is impressive for this amount of steel. My first time lighting it up so there may be a couple tricks to get it there faster. No issue holding temp once there either. I mainly will use the pellet function for overnight cooks after four hours of true offset cooking when I need to sleep.
That thing is incredible. I don’t need the pellets, but everything else is literally perfect.

Of note, mine is a fridge 48 and i believe the hybrid on website is a 36 so I bet that will get to smoking temps even quicker with the pellet hopper
