I am using this recipe for Christmas this year, thank you! Would you recommend slicing it up to the skin prior to air frying? Seems like it may be easier to just cut through the skin after cooking.
You can also dehydrate it for less time. I dehydrate my pork belly for 6 hours and it's all dried up and it turn out all crispy. As loh as theres no moisture on the air fryer, the skin will be crispy.
I use my CruxxxGG airfryer when making crispy pork belly. My cosori is onky upto 400 degrees Fahrenheit. On my Cruxxxgg, i can set it upto 450 degrees Fahrenheit and will make the skin crispier.

Pre slice t on the meat side. Not the skin side. This way it will be easier to cut it once it's done.

Would also be better if you prick the skin right away after the boiling part(skin is soft), and then the salt, so more water/fats come out overnight.
You used foil to catch the oil from the pork?so its safe to use tin foil inside an air fryer?
You can use aluminum foil, food grade silicone mat and parchment paper. They are all safe to use in airfryer
I'd chop the lechon kawali and put it in the back in the air fryer gain for maximum satisfaction.
