I have cooked this today - had to do some improvisation on a couple of ingredients - made a coconut milk paste instead of powder from a block, and I had no chilli/lime pickle so mixed some Mr Naga with the same volume of lime juice. It is by far and away the best thing I have done in 40 years of cooking curry at home.
I made this last night and I can honestly say it’s on another level, by far the best garlic chilli chicken I’ve ever tasted, I’ve made other variants of this dish and replicated restaurant takeaway tastes but this is something else altogether 👌🏻.

You two should do more videos like this now and again, the banter is good. I agree about how hard it is to get a decent BIR curry these days compared to back in the 80's and early 90's (for me) when you could expect consistency and dishes that actually had their own distinct tastes. Add to that they're not cheap if you make a mistake. Keep up the good work.
Such a good point - the Indian restaurant market is so different these days vs 15+ yrs ago, (at least in London) you often either have uber-up market wanna be Michelin or cheap & not so cheerful places... the good family run dependable Bangladeshi places are much fewer... imho

I have been cooking curries for years and even in my later years cooking curries as a business in the South of France. This recipe blew my mind. I cooked it tonight exactly as it was in the video and the whole family loved it. I wish I'd known about this while I was running my business because it knocks socks off what my Garlic Chilli Chicken was. Hats off to you. Bloody amazing.

Oh my word - that recipe is out of this world! I appreciate the pains-taking time you researched how to make that!!! My only suggestion would be 0.5-1 less teaspoon of paprika. The sweet chilli sauce and lime pickle in there are life-changing experiences!!!! Seriously guys, amazing!

Have just made this again this morning. This time exactly as per recipe, well except I only had double cream instead of single, and I used another chicken tikka recipe for my tikka, but apart from that…100% exact😅 Actually used the Bassar powder this time instead of Als mixed powder. Used all the chillies but took the seeds out. This is, if you take the time to prepare all the ingredients like I did and put them all in little pots, a really easy to follow recipe and relatively quick curry! I’ve made it up to the point of adding the Tadka. Have left it as I feel like most curries the flavour improves with age!! I know tomorrow it will be even better! Making with Poratas instead of Naan bread this time. Absolutely gorgeous!

I love Indian food. It my favourite. Have in the past followed books which don’t usually allow enough time for the ingredients to come together properly (onions translucent after 2 or 3 minutes then add 😱….onions now at least 10 mins!) and therefore have always been disappointing! In more recent times I have come to realise you really do need time to make a great curry and a good base! I have two books that are great, Les Portes des Indes and Dishoom. However, having discovered Als kitchen, my curries have come on in leaps and bounds!!! I just made this last night. (A couple of tweaks to my own liking) It was fantastic! I used Als mixed powder instead of the Bassar powder which annoyingly I forgot I had! I also used jar garlic and ginger pastes (laziza brand) with a little cori stalk thrown in. The recipe says 1 tsp of fennel seed but in the video he said 1 tblsp, took a chance and put the tblsp in😅, recipe called for ex hot chilli powder and 6 green chillies, i knew that would be too much for us, we like spicy curries however, we are probably 🌶️ 🌶️ 🌶️ at most not the 5 in title!! I used a tsp of ‘normal’ chilli powder, and 1 tblsp of Kashmiri chilli plus 2 long green chillies. Used only 1 tblsp of sugar as advised to start but left it with the one. Just as we don’t like excessive spice we don’t like excessive sweetness either!! Otherwise I think I followed to a tee, including the brands used, did the tadka, which I cooked as video, but took out the 2 chillies before adding to curry. It was spiced nicely for us, you got tonnes of flavour in the mouth, followed by the spicy heat hit as an after taste. I may add an extra chilli next time to see😮 but the flavour was so nice it really didn’t matter about having it spicy hotter. I am building my own curry list based mainly on Als Kitchen recipes, favourites being Chasni, Lamb Madras and his samosas! (Fantastic being able to use filo!) I do love it when a recipe works and this definitely does!

Even though I am Indian, I am still amazed by Aron's knowledge. Now I know why my curry never tastes good in a restaurant. Also, never prepared base curry seems like a good idea.
As a decent self taught cook over 30 years, I started learning BIR during lockdown!. Al has been the major influence and this vid has taught me a few tips too, 10/10 chaps. Al, you really don't know how much I have watched some of your work to learn and tweak to my tastes. Happy Christmas.

I'm in the Glasgow area - birthplace of Tikka Masala & Chasni. I've been making BIR curries at home for about 10 years and have tried several different versions of this one and none have came anywhere near what my local Indian restaurant does. This is outstanding - thanks for this we enjoyed it massively, the only one that beats my local Indian.

The last takeaway curry I bought was merely chicken poached in base gravy, so no more crappy takeaways for me!….. Very pleased to see east end ghee balbirs spices and Spanish paprika which are all in my cupboards too! Nothing better IMO, great video
Family used to own a couple of indian restaurants and takeaways in the mid 80s to 2000. So impressed on your knowledge of BIR. Your food looks great. True, standards have dropped. But some decent ones in brum who cater to the asian market and authentic to Pakistani and Bengali cooking. Miss those BIR curries though!

Enjoyed the banter also. It takes time for the 'Gift of the Gob' to develop as a presenter, no doubt. The fee flowing dialog found in your more recent vlogs is absent in the earliest submissions, clearly. My favourite dish is tandoori garlic chilli chicken I was at a restaurant once and it had a hint of fresh mint it was amazing very more ish, your dish looks tasty.
