+hbhell That old studio was in a basement. Probably poorly insulated as it leaked too. (See: roof leak episode). It's not that they kept it cold, it was just cold and CBS was too cheap to heat the place.
Well from my brief experience in the Late Night set tours from both Conan and Jimmies time with the show, all studios are kept cold. Part of it I believe they said it was to offset the stage lights. Most studios will suggest warm clothes for people coming to tapings.
None of those reasons.. for fucks sake why do humans make shite up...all studios are exceptionally cold to keep the cameras running better as those cameras are prone to overheating... simple as that...

@Vincent Ray partly that but mostly it's so the heavy makeup doesn't melt off under the lights. Same with live performance venues.
