Well, when you get out your daggers too early when you come in, the only direction you go is sideways. You lose ANY resistance to sideways forces. You cannot even steer, when you lay rudder, the boat changes angle, but still drifts where the wind blows it.

The daggerboard prevents the wind from causing the boat to slide because there is a lot of sideways resistance through the water
