This worked out great when I was trying to make gluten-free bibimbap sauce! My tub of gochujang uses wheat as a filler but my tub of doenjang doesn’t so I used that instead of miso. Honestly, I don’t think I’m going to buy tubs of gochujang anymore since I can make this - which is great bc the tubs usually expire before I can use them up since I’m often only cooking for myself.
Honesty I don’t like any cooking shows that easily. But I love your shows. There is something about you. Wil Yeung. I guess it’s about folks from Hong Kong. They have that calmness in them.

Thank you for this recipe! What a relief to know how easy & simple it is to make gochujang, knowing it's impossible to buy one that doesn't contain corn syrup & other preservatives. The only changes I made to this recipe is: used organic date syrup since I don't like to consume sugar AND I added apple cider vinegar instead of rice vinegar. I even made 2 versions: one with sesame oil for my kids and one without since I also don't consume/use oil for myself. Still delicious & kids loved it!

hmm if you have an asian grocery store, they should have it as its pretty common. If not, I would try getting a batch of dried red peppers, tear them in half and discard the seeds, then blend them up into almost powder

Learned a good thing to use miso instead of anchovies (being vegan). I will try this for other recipes too. Usually I just omit the anchovies, say for when I made Worcestershire sauce, and then maybe add more salt. It would be an interesting experiment to use miso in a western style sauce .

Hmm I don’t get notifications for replies, sorry about that... I try to use the vegan label strictly for food (if a dish or product has no animal products). I’ve found that the word vegan can mean so many things to so many people - hence I always try to keep the channel completely inclusive and non-political. For me, it’s difficult to say that I’m 100% “vegan” because it goes well beyond just what we eat, but what we wear, where we live, and how we live. Long answer....lol so I would say that I’m trying to be as vegan as possible 😊👨🍳

I mention this only to help fellow cooking aficianados gain confidence with adapting recipes to the needs of the moment. > Korean Chili Flakes: I substituted a 50:50 blend of XX Hot Red Chilie Powder (s.indian) and Kashmiri Red Chilie Powder. The latter is a bit brighter in color, fruitier and less hot than the former. Next time i'll hand pick, dry, deseed and grind some homegrown red chilies to ramp up the fruitiness and chilie flavors further. > Miso Paste, red/dark: To save a round trip to the store, I substituted some miso-dashi paste I had handy, and just cut back on the salt slightly. >Cane Sugar + water: I keep a squeeze bottle of homemade Dark simple syrup in my fridge, which I make from punjabi Jaggery/gur, so I used that (aside: recipe for approx 7 fl oz: 150gr shaved jaggery + 120gr hot water, boil n whisk til dissolved, cool n bottle). As for the water, I find allowing the paste a little time to rest off the heat, then using a whisk and a plant mister, and a little extra sesame oil, works great for finessing the thickness and developing a nice glossy texture in the finished paste. I will certainly be making this tomorrow for some of my future meals. I love spicy in my foods. Probably good with just a few veggies and brown rice. No limits.
@@YEUNGMANCOOKING I've been using the gochujang quite a bit since learning how to make it. It's replaced a lot of my hot spicy additions. Has great taste that I like. Maybe not for everyone but I sure like it and use it a lot.

I was missing a few items, but I was able to get close by substituting some similar ingredients I had on hand. I mention this only to help fellow cooking aficianados gain confidence with adapting recipes to the needs of the moment.
> Korean Chili Flakes: I substituted a 50:50 blend of XX Hot Red Chilie Powder (s.indian) and Kashmiri Red Chilie Powder. The latter is a bit brighter in color, fruitier and less hot than the former. Next time i'll hand pick, dry, deseed and grind some homegrown red chilies to ramp up the fruitiness and chilie flavors further.
> Miso Paste, red/dark: To save a round trip to the store, I substituted some miso-dashi paste I had handy, and just cut back on the salt slightly.
>Cane Sugar + water: I keep a squeeze bottle of homemade Dark simple syrup in my fridge, which I make from punjabi Jaggery/gur, so I used that (aside: recipe for approx 7 fl oz: 150gr shaved jaggery + 120gr hot water, boil n whisk til dissolved, cool n bottle). As for the water, I find allowing the paste a little time to rest off the heat, then using a whisk and a plant mister, and a little extra sesame oil, works great for finessing the thickness and developing a nice glossy texture in the finished paste.
It came out a tad hot, so I blended it into a half-full 600gr jar of commercial gochujang.

@@YEUNGMANCOOKING I've been using the gochujang quite a bit since learning how to make it. It's replaced a lot of my hot spicy additions. Has great taste that I like. Maybe not for everyone but I sure like it and use it a lot.
