      9-inch cheesecake
      Ingredients
      3 tablespoons melted butter
      18 graham crackers, crushed
      1 cup sour cream
      ¼ cup all-purpose flour

    Ok, my father is a world renown over achiever. He's the most stable, intelligent put together person in our entire family. Further more he's also the best cook. Every year he makes all the food for Thanksgiving and most of the food for Christmas. Funnily enough there's always been one thing he could never quite get right, Cheesecake.
    Well guess who just made a perfect, delicious, lemony, crackless, smooth as a babies bottom cheesecake? That's right! Thank you Chef John for giving me a way to stick it to dear old dad this holiday season. WHO'S A DISAPPOINTMENT NOW YOU OLD BASTARD!

    I made it for the first time and came up perfectly. I made the sauce with raspberry and add 1 tablespoon of vanilla extract. Everybody loved it. Thank you Chef John.

    I made this cheesecake for my husbands birthday. It is hands down, the best cheesecake i have ever made, including my german chocolate cheesecake which is out of this world. This was so easy. Make it. You won't be sorry.

    Another trick I have used that helps to keep the cheesecake from cracking is to place a shallow pan of water on the rack underneath. It really helps. Room temperature cream cheese, well mixed batter, cook till the center has just a bit of jiggle left, turn off the oven for cooling down, water underneath.....no cracks. Great recipe Chef John!

    Ok, so I used your recipe. I have made a lot of cheesecakes and am always looking for a new and better one, well, I FOUND IT! Made it last week...it was amazing. I baked it for an hour...decided to give it 10 more min...came back and it cracked all the way around the edges. It didn't sink in the middle...the top was perfectly flat and it had a great texture. I LOVE IT! I do like a sweet crust though, so I added sugar to it and upped the butter to a whole stick. :)

    Crust Ingredients:
    18 graham crackers

    Thank you so much for this! I just tried this recipe and loved the cheesecake. The only thing I changed was I used 2 eggs instead of 4 and adjusted the sugar accordingly. No cracks and taste was just awesome!

    here in switzerland we have some cheesecake slices to buy with a raspberrysauce on top, baked with the cheesecake. And we were looking for a recipe with the same ingredients like the delicious for soooo long and now... NOW I've found this!! :D perfect, thank you!!     I make this cheesecake last night and served it today. Oh My God... it was heaven on a plate. Granted it cracked even though I let it sit in the warm oven for 4 hours - I opened the oven after an hour to check if it was fully baked - but the cheesecake was amazing!
    I was concerned that the cheesecake may be overly citrus-y or the accompanying strawberry sauce may taste funny because of the balsamic vinegar, but the pairing was simply divine.
    Fantastic recipe!

      Theyre not really random, if you eat, smell, taste a lot of things youre going to get a sense of things. Combined with that you also can see people using different techniques, using different shapes, cooking methods tools....
      After a while you realize that certain things go well together, or certain techniques can make things easier. You realize that graham crackers can make something similar to a pie crust, you realize that creamed cheese can serve as a filling and that if you bake it, it'll become dense and creamy.
      Its just science

    I've become a fan of grapefruit zest. The flavour of grapefruit zest is so refreshing and yet have this nice body to it. It's a perfect combination of what lemon and orange zest can achieve in a cake. So amazing !

    Over baked my last one by 20 minutes, no crack and absolutely level. The trick, I wrapped some damp paper towel inside aluminum foil and then wrapped the strip around my cake pan. Next trick, after baking, run a knife around the edge of the cake while it is still hot so that when it cools the sides won't stick to the pan thus creating tension in the custard as it cools and ultimately cracking the cake.

    HOLYYYYY COWWW is this the most delicious cheesecake I've ever had...hands DOWN!! Easy too!! I didnt have any zest so I had to ad a splash of lemon juice. It was fine! However, I turned the oven off at the 1 hour mark and never opened the door for 3 hrs! I turned on the interior light after 90 mins and damn if that cheesecake didnt moon me😣.. Like I care lol. Its
    🥰🤩CHEESECAKE🤤!!! I The next day my son suck a taste before leaving for work. That night he said "MOM! WHERE did u get that cheesecake?!?!" He almost hit the floor when I told him. He too agreed it was the best ever! (We are HUGE cheesecake fans too!) Thanks chef John I'll be making this again SOON!

    My mother puts a pan of water on the lower rack when she starts preheating the oven. She leaves it there until she takes the cheesecake out. She tells me that it helps prevent cracking. Maybe. I don't like cracked cheesecakes, so I always do as she suggests.

      Omg yes! Thank you! The moisture inside the oven left by the water prevents the pie getting dry on top to keep it from cracking! Never thought about it! Great tip! 👏👏👏👏

      I don't believe this has anything to do with the cake getting dry on the top. It expands too much and then contracts when it cools and cracks that way. The water is mostly used for other styles of cheesecake though, and not so much for this one. This is meant to be darker on top, like New York style cheesecake is supposed to be.
      As Chef John explains here, the temp getting too high and it cooking too long and expanding is what makes it crack.

    I love this guy. Another trick to prevent cracking: cracks happen because of lack of moisture in the oven. See how he put the springform pan on a baking sheet? If you put it into a lasagna pan with walls a few inches high and add boiling water to the pan. It will add moisture to the over and your cheesecake will come out PERFECT.

    I've made this a few times, always with Philadelphia Cream Cheese. Last time I cheaped out and got store version. Turned out horrible. You really do need the name brand version.

      Read ingredients listed on package.
      Name-brand vs generic-brand: there may be variations of type of ingredients or amount ratio. (e.g., one could be made with more cream or a cream with higher fat content)

    Question: Why do we mix the sour creme, flour, and vanilla extract in one bowl before adding it into the creme cheese, sugar and egg mixture in the other bowl? Does it have to do with the airiness?
    I've made this recipe for a party by the way. it was gone within 20 minutes.

      I think the Idea is to reduce the amount of force you need to expand mixing so that you incorporate less air. if you put it in together you would have a thicker mixture that would require a greater degree of mixing to incorporate the other ingredients

    I went ahead and made this, going ahead and eating it with the family. Like the Grand Canyon, it was awesome, same as the majority of this young man's recipes that we go ahead and go ahead and make.

    I slowly baked mine in a water bath, on slightly lower heat, for longer, and it came out so freakin gorgeous!! I also went with 2/3 graham and 1/3 salted pretzel for the crust.👍👌🙌

    Chef John I just want to tell you! This is the best cheesecake I've ever tasted! From now on this will be my staple recipe(nothing wrong with my other one this one just tastes better)! Ur recipes I've tried have turned out AWESOME!!! I love ur channel!

    Recipe chef John:
    9-inch cheesecake
    Ingredients:
    3 tablespoons melted butter.
    18 graham crackers, crushed.
    1 cup sour cream.
    ¼ cup all-purpose flour
    1 tablespoon vanilla extract
    4 (8 ounce) packages cream cheese.
    1 ½ cups white sugar.
    ⅔ cup milk.
    4 eggs.
    1 teaspoon finely grated lemon zest.
    1 teaspoon finely grated orange zest.

    how would i make this into chocolate cheesecake? I wanna make chocolate cheesecake for a friend of mine's birthday coming up, but when i google chocolate cheesecake recipes most of them come out as the no bake cheater kind and i want to make the real deal

      Maybe you could add some chunks of dark chocolate to the mix and make the crust with oreo cookies. Don't add too much citrus to the mix, make it more vanilla. Or put melted chocolate on top.

    I made this recipe today Chef John, Turned out perfect, Second try at making cheesecakes, havent had a crack yet. but Hands down one of the best Cheesecakes I've had. Really silky smooth. Definitely will be making this recipe for Christmas for my family.

    No matter how hard I try with a cheesecake base it always crumbles. I've changed the butter, thr biscuits, extra butter, compacted the crumbs as hard as possible, even froze the base before baking, but no matter what I do the biscuit base always just falls apart the second I try and take it out of the cake tin.

      When you tried to take is out of the cake tin, did you make sure it was cooled? When i make it, i usually let the cake chill in the fridge with the cake tin for a day.
