Before embarking on next phil. Trip, take your mom to doctor for check up of blood pressure, blood sugar and heart. Her age is vulnerable, her last trip was strenuous in hypertension. Make sure she brings all meds, and blood pressure kit.
Hotels have physician 24/7,dont hesitate to use them. Most philippine doctors excellent in treating, cost is reasonable. Argue airline to give her front seat, they listen, unless you demand, you dont get. Spent a little more money on comfort, you wont regret it.

Using Beef is a better and more delicious option instead of Pork. Saute first the Onion and Garlic. Add the meat. Add Ground Black Pepper and Salt or Fish Sauce (Patis). Remember, Fish Sauce and Soy Sauce are both salty, so check the amount you put into. Pour Water and let the meat tenderized. Add water if needed, until meat is soft enough. If meat is OK, add the tomato sauce and vegetables, bay leaf to add flavor and fragrance. Pour a little amount of soy sauce to add flavor. Wait till all vegetables are soft enough but not overcooked or burnt. The outcome should look red (cause of the Tomato Sauce) and NOT dark (cause of Soy Sauce). Serve and enjoy.

Andrei, when you cook any food in a more open like a wok, your dishes will dry up fast and not make little sauce in its own. It's better to cook them in a caserole type container where you allowed it to make some natural sauce from the meat. You still need to fry the meat first, then add your vegetables when meat is nice and tender. Menudo is better if you use pork loin or port butt and cut them into cubes including your sausages. All should be cut uniform way. It's also good to marinate the meat overnight in calamansi, but of course, in your situation you can substitute it with lemon and soysauce. And the last secret ingredients to thicken the sauce is liver pate (in can is ok), I noticed your patis is Thai brand meaning delicious. Lisa is really a great cook now like your MOM. You don't need Mama Sita's spice packet to make Menudo. It so simple, tomato sauce, pork, sausages, patis, and all what you have in hand. Sargey will enjoy the Philippines. He such a hardworking husband. Well, he has now 4 boys to help him when they get older.

Glutinous rice is good for champorado and lugaw mix with some jasmine rice so it will not be too sticky.
Try to cook some lugaw with bite size chicken and also with ginger and some sprinkled saffron for color.

You have to stir FRY the pork and when it gets a little brown, then you add the garlic and onion and continue to stir fry it for another 2 minutes.
That way, the garlic/onion flavor is INFUSED with the meat (whether it's pork or chicken).
