      His judgement was affected by the caveat that they were complete novices. I assume if the challengers had been trained chefs with 10 years each under their belts the judgement would have been far more severe. As it stands I think the boys did surprisingly good for a first attempt, hence the high scores. All of them far exceeded his expectations.

    Chef Koji is the real MVP here, I feel like he really took consideration that the three of them are super duper beginners. I love how he actively praise them as well and highlighted the positive points instead of the negative ones. As a beginner it can be really discouraging to fail (even though it's very normal) and it can be nerve wracking to present your work to other people (let alone a Michelin star chef), so his positive reviews really warms my heart. He's a super kind and encouraging teacher.

      @tokuen7796 2 ปีที่แล้ว +123

      I think the chef being very positive and forgiving has more to do with the fact that he has been doing this for a very long time. Above anyone, he knows how long and hard it is to be able to perfect the cooking techniques and master the dishes. So when he saw the boys trying their best to replicate these very hard dishes that were only taught to them once, naturally he won't be too harsh on the techniques or the presentation, because that takes years to master. As long as the dishes taste decent and aren't completely inedible, I think that's good enough for him.
      It's like when you speak to someone who's trying their best to speak your mother tongue. You don't really care about their wrong grammar or pronunciation, you care about the essence of what they say. If you can understand what they mean then it's all good.

      @@alexstrife-sinclair6391 I was in shock so I don't remember the level of pain (I cut a small nerve and still can't feel part of my thumb many years later), but I was actually pissing blood for quite a while, and that part is kind of a weird story.
      While I was sitting there with my thumb squeezed in my other hand, the wound elevated above my heart and strategically placed over the sink (whilst trying not to faint), many of my colleagues tried helping me stop the blood with their first aid knowledge, but to no avail. The dripping didn't show any signs of slowing down. As it was very close to the start of the service, everyone had to go back to work and I was waiting for my partner to come pick me up and bring me to the hospital. Then came a middle-aged waitress who timidly but confidently entered the bathroom I was sitting in, telling me she had "a gift for stopping blood". Now, I didn't believe in stuff like a magical, unexplainable "gift" (and I still don't), but I was desperate so I let her hold my thumb. She held it gently, without putting much pressure, and seemed to concentrate on her "gift" for a few seconds. To that point, as I said, the blood didn't show any signs of slowing down, and I was actually worried that it would worsen if people started handling my wound in untrained ways. Well, to my astonished relief, after her short little ritual, it completely stopped. It didn't even start again later and I could go to the hospital without ruining the car seats and worsening my anemia. It still gives me a little bit of cognitive dissonance when I think about it. Not gonna lie, even though it took him the least amount of time, I feel like presentation wise and remembering how to do it wise, Joey did deserve the win in this one. No clue how I would have compared the dishes taste wise but the presentation and process, Joey did really well on.
    I will also say, Garnt did get a bit shafted on basically having an hour to cook a dish that sounds like it takes about an hour and a half normally.
    I hope you guys actually do this again. This was a good one.

On top of that he didn't slice the sashimi thinly which is the biggest part. The flavor is just the fish being fresh and good quality in general
