So if Karen hasn't (implicitly) asked him to chose between his friendship to Pam and his relationship to her, then maybe they could have all been friends, and he would have stayed with her. But it is unlikely, since we're talking about Jim and Pam here :D
I love how Jim's face lights up when Pam tells him about the contest. He is so happy for her, interested and supportive. In the end the only opinion and reaction that mattered for Pam was his. They should have kept the scene because it's beautiful.

Jim was out on a sales call that day with Dwight. I think this would not have been shown in one go but would have been cut up in multiple pieces, 3 or 4, that would have made it a story through the episode. So the reason she tells Kevin and Angela first is that they were still there that day but Jim left for the sales call. Jim probably just got back with Dwight because he was hanging up his coat at the start and he hadn't even seen Karen yet (as you can see by his reaction). So she pretty much told him right away when she had the opportunity, it's not an ideal time to tell him as he is just leaving but she can't even wait for when he is back from his coffee. Wich makes more sense for her character then waiting imo.
I always felt like Pam's art was kind of a cruel joke. She obviously loves doing it, but she's also obviously only average at it. It's kinda painful to see Pam get all excited and passionate about her hobby only to discover that she's not actually that good at it and that even her best works are only average.
Art is a matter of taste and context. One piece of art can have great impact on one kind of people, while being meaningless for others. Also artwork is a continuation of personality of the author, so if the author is interesting, her works will be interesting too.
That´s what passion is all about. It doesn't matter if you are the best or average. If you enjoy it and get excited about it you keep going that way, is what you love.
I can see why this is merely a bonus scene. Even so, it is still good to see, because we already know from the pilot episode that Pam had showed Jim her watercolour and oil pencil illustrations, and that Jim had said they were good. The fact that Pam had not given, say, Roy's opinion on her work shows that it was Jim who was most invested in her art. And in the next season, Jim and Pam had an argument when she turned down the graphic design internship in New York. Jim justifiably felt that Pam wasn't taking chances. So Pam winning an art contest would have been a nice culmination of that subplot arc. But again, it is technically filler, and Jim had not been so open with Pam during this episode or immediately beforehand. Although to be fair, Jim's reaction to Pam may have helped confirm Karen's suspicions. It would be just a little too obvious. So I can see why it is only a bonus.
