Are these real fights, or are these dudes just playing it up for fun? High-level toribash must be crazy if they're really fighting...
The boxing ones are a bit of both. The try to fight and damage the opponent. Who ever has more points at the end wins.
people usually fight more to show who won in the replay than on points. but overall yeah its a mix of both

On my discord server linked in the description, there is a Toribash Replays channel to send them in
are this moves really possible to do in game, or is it animated in some other way? cause some of the moves here seem impossible, like trowing a jab. or i just can't figure out what shoulder muscle to act on.

It is possible and it can be easily learned try joining spyder or TFA
they are robots made for battling?
