No, I am Vietnamese and they don't add cornstarch. The sugar is cooked with lime and some water on the stove to the consistency of corn syrup. It is then cooled and fish sauce and more lime is added. Corn starch is never used in nuoc cham.
Watching this during Quarantine....very nice recipe - until you tasted the fish sauce and used the same spoon to mix it again...AAAAHHH.. OVERALL you did good.

Yes! I keep mine up to 6 months... if you need to freshen it up a bit, add more garlic and lime to it. It’ll revive it! Enjoy!

Yes! Either one is fine. I just like lime bc it has more of a tangy taste, whereas lemon is more tart. I hope that makes sense. 😂😂

The dipping sauce is nuoc cham. It is based on nuoc mam which is pure fish sauce. The labels on here are confused.
