Lads this is the format! Down to earth conversation with the chef while highlighting the dish they hold dearest to them. Couldn't think of a better way to get to know what these people are like! And Tom was a fantastic person to start with!
Shame Gary Rhodes is no longer here RIP. I used to work for him for a while and would just love to see him talk about British food and demonstrate to everyone just how good that bread and butter pudding was

It's a divine plate of food, and I'm pleased to see him recognise that he learnt it from the late, great Gary Rhodes, whose impact on British restaurants and cuisine aren't widely recognised.
While not always wild about Haddock I must say this omelette sound highly inviting. That said though, the image at 8:31 shows rather too much caramelisation of the topping, does it not?

I’d imagine that dish tasted fab. However bit too black on the top me thinks.
Didn’t taste burnt in any way, the charring adds rich smoky caramelised flavours and gives a slight crunch to the top - perfect!
