Ground sumac (find some from a good spice vendor with as little salt as possible) is a versatile spice, bright, interesting flavor (good on grilled fish too), grow some cultivated green or golden purslane, it’s super high in omega 3 fatty acids and adds a world of flavor and texture. One trick my restaurant owning Lebanese neighbors use is taking one half to a whole depending on size extremely (or over) ripe tomato and grinding or blending it into the dressing of simple lemon juice, salt, pepper and olive oil..this adds plenty of flavor and acid into the dressing, bulking up its soupy-ness..best part is the liquid at the end, soaking up the liquid with some pita..(think equal amounts of each green..purslane, parsley, green/red onion, tomato (must be ripe), lettuce, cucumber, I’m sure I’m forgetting stuff..sprinkle on plenty of sumac and mix very well..

I do have a general question, really for all of the cooking shows; how can you use so much salt and not have a stroke (or whatever). I have high BP, and wonder everytime i watch a cooking show about the amount of salt used. Im not looking for answers like how much better everything is with salt etc, i do know that, just really what can be used as a sub. I am such a foodie, love to cook, and my restrictions on salt just really suck!!!😢😢

I am the same! People say (when the weather starts getting cooler) oh! Great it's soup time!! I'm over here slurping my soup thinking, there's a soup time? Like 1pm everyday? Soup is not seasonal in my world, the kinds of soup may be, but soup is an always thing here.
