My take: I think it’s more a result of the circumstances rather than a choice. So, you have your H Paladin and WW Monk because… Shadowlands. You bring the Rouge for utility + Mists (the way they pull it) gives you some great pulls for funnel damage. He explains mid-video that they chose the Hunter to have CDs up consistently in the maze. At that point, with 3x physical DPS, the Warrior in the tank position just makes a lot of sense to boost the AP for your physical DPS.
I’m sure there is more finer detail to it than that going into their planning though. Questions like “How many AoE stops do we need for these pulls?” or “How much time will we save from X utility from X class?”.
