Problem with recommending a good restaurant in Madurai is... They scattered around the city. You were standing at literally middle of the city which has very small restaurants and if you want to reach a good one you need to walk and take dozens of turns and it is extremely hard for anyone to give navigation for a walking person for a 2 or 3 kilometres of distance. So the local boys stunned.

Just understand one thing...I lived in UK for 3 full years. If I ask for a direction, they will simply walk. They don't apply their brain. This is Britishers I am talking about. Now also you guys should understand Indian culture first. There is youth class, poor class, middle class and upper middle class. Of course Rich bit you will never come across them. This youth can eat anywhere as they care less for hygiene than money. They won't have money and so they prefer no frills shop. For example I had very less money. So I won't go to Saintsbury's but prefer local no frill grocery. The product wise the quality won't be that good but price wise saving those pounds was very helpful for me. Then in and around temple towns, there will be LOTS of small mini tiffin food centers and that's meant for moving tourists. When temple closes, traffic will also close. People don't come there to EAT and the people who frequent those places are more like one time. They may never come back to the same restaurant ever again. The hotels, veg restaurants that you are asking for will be AWAY and might be too complicated to give directions. please understand that logic. You can take your cell, just google top veggie restaurants. You will get plenty. None of them will be in tourist areas. These are all small haberdashers who run their businesses with no frills. You people simply stop everywhere and ask questions. You should have the basic intelligence to understand how complex these cities can be. Do some homework sitting in your hotel by Googling. Or ask the hotel desk before stepping out. They can give you clear info.

The one jigathanda you had at the last clip of your video is the actual original jigarthanda of madurai, it was from there the jigarthanda got famous not only in madurai but all over tamil nadu. Been there quite a few times and I can say it taste the best when compared to other jigarthandas.

Gosh, the THINGS that are said to make a video sensational in simply mind-boggling.
Probably about 18 hours, working in three shifts. A Parota restaurant usually won't start service till lunch time (so around 11 AM). The kneading a cooking would start at least 4 hours in advance.

1. I AGREE that it is hard work.
2. HOWEVER, they do NOT knead the dough continuously for four hours before cooking it on the griddle or flat-top.
The kneaded and rolled-out dough is allowed to rest (in order to rise) for several hours before it is flattened into circles (again) immediately before it is cooked on the gridle/flat-top.
3. That means the workers do get substantial breaks/rest-time during the work-hours.
It is simply humanly IMPOSSIBLE to work non-stop for such long hours in the heat in places as hot as Madurai.

In either case there bound to be cooks working in two or three shifts for a restaurant that is open from 11 AM to midnight. I've spent time observing the kitchens at Anjappar and Adyar Ananda Bhavan in Chennai, and Bengaluru. Depending on the expected volume of business, the Parota team starts as early as 2 PM for dinner service. It takes time to roll out and make those individual laminated balls of dough. Each cook makes hundreds of them every evening.
They charged u very less , they treat u as their guest😂 otherwise it will be around 3.5-4USD. Like your personality, you are friendly and passing your vibes to all around you that why they welcomed u in their kitchen. Finally they called you anna. Hello Mike, There's a good reason why those local lads said that they don't know about any vegetarian restaurant 😂 as Madurai is a place known for its Mighty Meaty food which includes naatu kozhi kulambu, parota, mutton Chuka, curry dosa, Mutton or chicken biryani rice and many more. Just understand one thing...I lived in UK for 3 full years. If I ask for a direction, they will simply walk. They don't apply their brain. This is Britishers I am talking about.
Now also you guys should understand Indian culture first. There is youth class, poor class, middle class and upper middle class. Of course Rich bit you will never come across them. This youth can eat anywhere as they care less for hygiene than money. They won't have money and so they prefer no frills shop.
For example I had very less money. So I won't go to Saintsbury's but prefer local no frill grocery. The product wise the quality won't be that good but price wise saving those pounds was very helpful for me.
Then in and around temple towns, there will be LOTS of small mini tiffin food centers and that's meant for moving tourists. When temple closes, traffic will also close. People don't come there to EAT and the people who frequent those places are more like one time. They may never come back to the same restaurant ever again. The hotels, veg restaurants that you are asking for will be AWAY and might be too complicated to give directions. please understand that logic. You can take your cell, just google top veggie restaurants. You will get plenty. None of them will be in tourist areas. These are all small haberdashers who run their businesses with no frills.
You people simply stop everywhere and ask questions. You should have the basic intelligence to understand how complex these cities can be. Do some homework sitting in your hotel by Googling. Or ask the hotel desk before stepping out. They can give you clear info.
