I think some characters like kefla can do that when in sparking mode.
Just mash guard while dragon dashing but you have to be in sparking

After 3 hours of doing this guys method it was not working but when you dragon dash hold r2 and the direction your going but then you let go of the analog stick and quickly hit r2 again THEN hit x because if you do it at the same time it starts another dragon dash. Hope that helps dude you’ll get it eventually

Press R2 + X to start dragon dash.
Keep holding down R2 but let go of X
Now press X and you should Dash behind the opponent.

Its not confusing, the game doesnt tell you to use the analog stick(because you dont need to). Just double tap R2 + X that simple.

Yeah this is true the stick needs to be used if you want to dragon dash in a specific direction for a while. If you just want to get behind then yeah no Analog

when i use this on a match I often find myself in front of the opponent giving up my back, like 50% of the time. Does anyone knows why? Is that they do dragon dash as well or they do some sidestep? Or I am simply doing it at the wrong timing?

It depends bro.
If you're in the middle of a animation like a Ki charge or super move they pretty much get in for free.
People normally do it when at a distance, so you gotta see em dash, then the best thing to do is block.But the block has to be after they dash and disappear or you will get hit.
If you're good at timing the R1/RB instant transmission, that should be your go to move.
Holding O/B for perception counter is also good but you can end up getting hit in the back if you do it too early.

Dragon Dash in the direction you want to go but you must not move the analog stick you can't alter the direction at all.
Make sure your holing R2 at all times
once your going in a straight line just press X again.
