The rebuilding of the pig lot and cowshed is almost complete. Most of the work is done by builders in our village. The rest is now my responsibility. Water bamboo shoot is just in season these days. They are very sweet and tender, and crunchy as well. Here in Yunnan, we usually cook some rice noodles with fungus when we are busy. It takes only one minute but will make you very satisfied.

I can't believe how much I've come to love and look forward to these videos! This phenomenon that really got hugely popular because of Penji here (Dianxi's nickname) and Liziqi and I think Ziqi was the first but Penji came soon after. These videos do something amazing other than the artistic beauty of the finished product, they show that we're all the same. They show that we all share a common human experience....I believe these videos are breaking down walls and that they are also historical documents that will be watched thousands of years from now for a glimpse into how they ate and interacted in the 21st century.

It’s amazing that the process of growing something takes almost forever, but to eat it only takes a short amount of time. But by watching liziqi and Dianxi cook amazing food that not all of us has eaten before. I wonder what health benefits are in bamboo? What noodles are healthier? Etc.
It's not really a bamboo, although it's commonly called "water bamboo" as its texture is like bamboo but it grows in water. It's actually wild rice stem, which isn't really rice either, just a type of water grass.
We eat mostly rice noodles in the Southern China, which are obviously gluten-free.
I grew up in the city then one day moved to the country side in my early teens where we began farming. It was hard work! So I admire your earnest work and integrity to make this look so easy
