    Oh! And perennials like sunchoke/jeruselem artichoke (container it if you don’t want spread), asparagus, borage. Nasturtium for colorful filler and tasty leaves (yummy wrapped around chicken or tuna salad, or hummus).

      I have bad memories of Jerusalem artichoke so it will probably be a few years before I plant it here.
      Have you tried growing asparagus from seed? I've only tried it from purchased plants as a child but haven't been able to find any so far. Maybe it's a fall thing, like strawberries, which I've also never tried to grow from seed.
      Nasturtiums are very peppery to me, my husband would probably love them. I'll see if I can find some at a reasonable price. Seeds are not cheap here - like most anything.

    DowntownHomesteader here ☺️ I watched a video today referencing a “staple garden” I hadn’t heard of that concept before, but it’s just as it sounds! This person plants these items every year and it makes up the bulk of what she preserves: peppers, tomatoes, sweet and white potatoes, carrots, peas, green beans, onions, zucchini, cucumber, cabbage, and beets. Sometimes corn but that can be a tricky one. She plants other things too, but those are the things she’s never without.     I’m big on herbs and leafy greens for fresh eating, but other than making greens powder they don’t store that well. For fruit I love ground cherry because it self-sows and is no work. It’s easy enough to recognize in early spring and pull up if it starts spreading somewhere you don’t Iike. Elderberry is also a great medicinal fruit, an has such beautiful flowers. It likes moisture so if you have any boggy areas it would probably do well there.
    And most people find lambs quarter to be a nuisance and want to weed it out, but I cultivate it 😂 it’s interchangeable with spinach in the kitchen but it does not bolt, does not leave the weird feeling on your teeth, does not get bitter, and can be harvested all season - just keep trimming the tops. If you don’t want it to go to seed, chop it down when it flowers. But I can’t get enough of the stuff. I blanch and freeze it for year round use.

      A garden of stables sounds like a solid plan. I'll go give it a watch for sure. We will be doing a good number of those plants this year but not enough to keep us going for a year. I don't think we have enough room to be self-sufficient in much but zucchini and some herbs.
      I'll look into ground cherries, are they the same as pineapple cherries?
      We have elderberry growing wild everywhere around us so no need to use our precious space for it. Last year, we made elderflower fritters, those are sooooo good. I haven't made sirup for a few years. I need to pick that back up.
      I don't think I've ever tasted lambs quarters. But I love spinach and you sell it very well!
