Like you said one of Jet Li's students convinced him that he was beaten unjustly by that Master when the truth was he was out of line. Jet Li didn't know that and in a fit of rage he fought and killed that Master. The Master's son then kills Jet Li's daughter and the others at his home. This movie is absolutely amazing on every level.

Those chinese swords used at the start are called Jian (the big saber seen later is a dao) and they're not that long and usually have a pretty small guard, so most one-handed european swords have an advantage over it, especially in this time period when europeans used long well-guarded sabers and rapiers made of good steel, a jian would be hard pressed to match it in a duel. The katana has a similar issue, it is very short for a two-handed sword, and the guard is very small, so a two-handed european sword also has an advantage over it.
The katana sacrifices everything for a very hard edge with a thick soft metal spine. This makes the edge harder than most european swords as they're made of spring steel, but the disadvantage is that the katana can't bend at all without destroying the blade, while an european sword of the same period can bend all over the place but still return to true. You're not supposed to hit armor with swords anyway so the technically softer edge isn't much of a disadvantage.
But because of all these differences theres no such thing as "the best sword", it all depends on the purpose of the sword. But if we're to match swords against each other then the european swords are quite advanced. These wushu sword fights are not representative of reality, they just look cool, like chiense superhero movies. Same ofc also goes for the kungfu vs boxing clip.

As far as who has a better sword. Eastern countries like Japan and China has good sword, very well made. But Europe had better metal so even their poorly made sword where tough
