    A teaching staff, composed of veterinarians, university professors, doctors in animal production, together with the inventor of the European patented method for the maturation of meat, will follow techniques and didactics with 40 laboratory hours and 20 teaching hours, a final exam, held by the examiners of the Italian Meat Federation, Chamber of Commerce and Confcommercio, will award the certificate of Manager of the traditional Italian food chain.
