    Fun fact:Traditional andouille is hand chopped. Not run though a grinder. But im a grinder kinda guy.

      @@FracDaddyBBQ once you grind it you have cajun pork sausage. won't taste like andouille. and pecan for andouille. lol

    I smoked the butt first then pulled it and packed it with ground back fat and caramelized onion

    I bet that is some good down home sausage, but unfortunately it's not andouille sausage. Looks good though.

    There is something you're not getting about andouille. It is made with very large chunks of meat. You would use a 1/2" plate minimum. You would never do a double grind on andouille. It's also put in large casings and smoked for 7 or more hours. When you do a fine grind like you did you have cajun smoked sausage, not andouille. Take a look at an old video by toddrodrigue on youtube.

    Looks really good! I have never meat sausages yet but I do find it interesting. Yes and I can imagine that that tasted much better to you. Things always seem to taste better when we make them ourselves. Don’t get me wrong I still respect Johnsonville. LOL

    Incredible Jared I've always wanted to make my own sausages...My request is that you cook something like a gumbo or Jambalaya I'd love to see that!!!!

    Wow! Andouille is my favorite Cajun Sausage. They turned out beautiful. I am going to make this recipe. When you get ready to cook a Gumbo let me know because I have a Gumbo Seasoning Mix that I am coming out with soon, it comes with a recipe to make traditional Cajun Gumbo. I also have an Etouffee Mix and I am working on a Red Beans Mix and you provide the Rice.
