Sautéed Brown Rice & Peas

  • Try this for a side dish or main meal! So delicious and healthy and easy to make. Enjoy!
    2 Tbsp Extra Virgin Olive Oil
    1 Cup Goya Brown Rice (or your favorite brand)
    2 1/2 Cups Veggie Broth
    1/4 Cup chopped onion
    2 to 3 Tbsp Minced Garlic (or a dollop of dried minced garlic)
    1 Pkg Birds Eye's Frozen seasoned peas and mushrooms
    Sautee onion and garlic in the EVOO till translucent then add the rice. Sautéed for 2 to 3 minutes
    Add the Broth and stir
    Stir in Peas mixture
    Place the lid on the pan and simmer till all the liquid is absorbed (15 to 20 minutes)
    Add Protein if you like
