@@aueaue1664 We don't call it 'shish kebab' in Armenian. We call it 'khorovats' like the title of this video says. Khorovats is the Armenian version of shish kebab. shish or shesh = six (6) in Persian; kebab=to cook over charcoal as in BBQ. It basicaly means a BBQ skew with six (6) pieces or chunks of marinated meat!
this is almost how i do mine for the last 30 years only few difference is i put tomato in to blender so the meat can soak it better, i do not use tomato pure as it burns when cooking, i do not put pomegranate juice due to changing the texture of meat, i put very little yogurt or milk to soften the meat and it has to rest 1-2 days before cooking, well done as this is your version i might try it to see, we love and respect Armenian people and their culture, dont let some racist comments get to you...
would I find apricot wood? Apricot is Armenias main fruit. I'm in Louisiana, we have various woods, like mesquite or apple or hickory. After the meat is done, it was placed in a pot and we would sop up the juice with lavash hots (bread) Lisa Markarian
@@Josh-g7d9t apricots are the main trees grown in the Himalayan according to a book written by a journalist studying the Hunza Indians. The seeds are dried and ground into flour which makes their bread. My mother bought the book that came with a package of the apricot flour that was very good. They raise goats that can climb the steep mountains and they also walk up and down the mountains. They live a long life and it was noted that men in their 90s were impregnating women, had perfect vision and good teeth. They fasted in the month of April because the food supply was finished. Is lamb shoulder the best cut of meat for kabab if I like the meat to be juicy and have some fat? I don't like lean meat as it has little flavor.
