Having had cancer, my chosen way to fight against cancer is to not consume sugar and to avoid environmental pollutants, made man food additives and known carcinogens. I’m not a fan of raw meats, but medium rare to medium is spot on nutritionally and is satisfying to me. ALTHOUGH I very often will slice off a piece of salt pork fat (with no lean streak) from pork I raise and consume it raw. It must be salt cured (not simply salted) and be my own. I don’t worry about parasites because the two sows I designate for consumption every year, never soil touch again after being weaned and wormed. So I guess I am part of the 99.9% you spoke of. 👍🏽

I am one of those people who don't throw up even when the should but as I said, I am getting pretty frail in my age.

I have had lots of deer hearts. Raw. After the kill. Still warm. My father showed me. His father him.. Yeppers, I kept it going. While hitting the deer. It was the first thing eaten... Warm and a wonderful taste. And Camp Dog Cajun Seasonings. You could sprinkle it on a 2X4... It would still be tough... But the taste would be great... Keep on spreading the word. I’m not sure about all parasites but Trichinella does not die in the freezer! Fortunately, that is not a parasite found in a ruminant animal. Ruminant animal is safe from parasite in the muscle!
@McGieHomesteadAdventures I try to age about a week depending on the wheather , do you think if it's in the mid 40 degree range the meat ages quicker and you can get the same benefits from ageing but in a shorter time?
What does the note taped to the band saw say ? I know you are into the cajun type flavors but had you thought of making a traditional tartare ? I have done it with grass fed beef and it was very good -- good video -- thanks
The note tells what belt at Napa auto parts store is the equivalent that fits this saw. Much cheaper. I’ve never had or even seen tartare….. I need to check it out!
So I found a beef carpaccio video….. it’s basically the same thing we did here…. Except with capers, arugula, and sauce and cheese……… so I’m a carnivore so those side extras don’t work for me………. But I’ll have to try the deer heart like this!

Edit theres also a rule on freezing, to kill parasites (dont remember exactly what for how long), like fish 3 weeks chicken/pig 4 weeks etc, i dont remember, but there is something like this, if you want to eat it raw.
I’m afraid the parasite that we deal with in our local wild pork is Trichinella and no….. freezing will not kill them. Fortunately, the meat of animals that are ruminant does not have parasites. Neither does the fat of our Mangalitsa pork.

I could definitely do fried fat and raw deer roll. When I was a kid my mom would say you can't eat raw meat it would give you worms.
Yes pork and other non-ruminating animals can, but not deer, beef goat or lamb.
