  • The Cooking Process, how to cook homemade pizza in your home oven.
    As you can see in this video I'm using a pizza steel. This is a large 1/2" thick like 18" x 20" pizza steel. You don't need one this big, I just like to make large and sometimes extra large pizzas. If you have a smaller pizza steel or a smaller pizza stone, simple adjust the size of your pizza crust and ingredients and make the appropriate size for your set up. Whatever you're using, the most important thing is to stick it in the oven on the center rack and pre-heat it for at least an hour at the highest temp. you oven goes to. In my case this is 550 degrees F.
    As mentioned in the video, I'm doing a 2 part cooking method. The first 5 or 6 minutes the pizza cooks directly on the steel, rotating every minute or two. After I feel like the undercarriage is cooked just right, I switch the oven from bake over to broil, pull the pizza off the steel, throw another rack in the oven one notch higher, place the pizza on an aluminum pizza pan and broil the pizza a few more minutes rotating every minute or two. This particular pizza had a total cook time of about 11 minutes but you really have to go by look and feel. This is not an exact science and no two pizza cook exactly the same.
    You want to throw the pizza on a cooling rack for a few minutes before you slice it up to make sure the bottom doesn't get soggy. You want a nice crispy undercarriage.
    I made this video after making 10 or 20 pizzas over the past couple of years so I have built up my confidence in the process. Don't be discouraged if you don't get the best results on the first try. Practice makes perfect.
    You can actually freeze the dough balls in a freezer bag for up to a few months with good results. Simply let the frozen pizza dough-ball thaw out overnight in the fridge. Once it has totally thawed out, line the container with some olive oil and cold proof another 1 to 2 days in the fridge and it should still proof up and cook nicely.
