Ingredients:
**** For the Bhaji (Vegetable Mixture):
2 tablespoons butter
1 tablespoon oil
1 teaspoon cumin seeds
1 large onion, finely chopped
1 green bell pepper, finely chopped
1 teaspoon ginger-garlic paste
3 large tomatoes, finely chopped
2 medium potatoes, boiled and mashed
1 cup cauliflower florets, boiled and mashed
1 cup green peas, boiled and mashed
2 teaspoons Pav Bhaji masala
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
Salt to taste
1/4 cup fresh cilantro, chopped
Juice of 1 lemon
**** For the Pav (Bread):
8 Pav buns
2 tablespoons butter
1/2 teaspoon Pav Bhaji masala
**** For Garnish:
Chopped onions
Fresh cilantro
Lemon wedges
Instructions:
**** Preparing the Bhaji:
1. Heat Butter and Oil: In a large pan, heat the butter and oil over medium heat. Add cumin seeds and let them splutter.
2. Sauté Onions: Add the finely chopped onions and sauté until they turn golden brown.
3. Add Bell Pepper and Ginger-Garlic Paste: Add the green bell pepper and cook for 2-3 minutes. Then add the ginger-garlic paste and sauté until the raw smell disappears.
4. Cook Tomatoes: Add the chopped tomatoes and cook until they turn soft and the oil starts to separate from the mixture.
5. Add Spices: Add Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix well.
6. Mash Vegetables: Add the boiled and mashed potatoes, cauliflower, and green peas to the pan. Mix everything well and use a masher to blend the vegetables into a smooth mixture.
7. Simmer: Add a little water to adjust the consistency if needed. Let the bhaji simmer for 10-15 minutes, stirring occasionally.
8. Final Touch: Add chopped cilantro and lemon juice. Mix well and turn off the heat.
**** Preparing the Pav:
1. Heat Butter: Slice the Pav buns and heat a flat pan or griddle. Add butter and a pinch of Pav Bhaji masala to the pan.
2. Toast Buns: Place the buns on the pan and toast them until they are golden and slightly crispy.
**** Serving:
1. Serve Hot: Serve the hot Bhaji with the toasted Pav buns.
2. Garnish: Garnish with chopped onions, fresh cilantro, and lemon wedges.
