    Grandma always had fried chicken on sundays after church!! With pinto beans,gr beans,potatoes,cornbread, ect..and she always made me a choc pie all to myself.,hid in the back of the refrig..I sure miss those days!

    This is Jimmy from Indiana. Yum Yum!!! My mom always fried her chicken in a large deep iron skillet. It was the best. I was always unsure about cutting up the chicken. Thanks for the lesson. My wife and I have a small homestead. We have some baby chicks and also a hen sitting on 10 eggs. We plan on keeping the hens and putting the young roosters in the freezer. My wife also wants to can some chicken meat. God bless!

    My daddy wasn’t always home when I was little because of what his job entailed in the military. When he was home there was almost always a fried chicken on Sunday-even if we had to go catch out behind the house. Daddy and I both loved the back and the wings. Since there were two wings we’d both “call” for the back at the same time. Mama started cutting the back in half so we each got a wing and we each got half of the back. Daddy passed away this last June just shy of his 87th birthday. Had he made it until July 4 th he’d been 87. We buried him with the love of his life at Ft Sam on July 11th and watching this video has just put the biggest grin on my face which is why I love watching y’all. Though I am South Texas born and raised mama would send me up to the Ozarks frequently when I was little when daddy was overseas because I was hard to keep inside. I was always being told I talked funny even now and you know what-me and God are just fine with the way I talk! Y’all have a blessed week to come.

    New subscriber from the hills of north Georgia! I was raised up with my grandparents keeping animals, so I'm good at plucking chickens, but I always left the kitchen when my Grandma went to cut them up. My husband asked for fried chicken as his birthday dinner today, but the store was out of pre cut fryers. My granny is no longer with us, but as a child of the internet, I googled how to cut up a whole chicken. It brought me straight to you, so thank you so much for showing me how to do it. :) I always fry it up like my Grandma did, with buttermilk and bread crumbs, in a cast iron skillet full of lard. I'm off to check out the rest of your videos.

    It has been 35 years since I had good fried chicken. My Great grandma had the best tasting fried chicken. She raised her hens, and they where pampered too. Their meat was sweet and juicy. God bless my great grandma!

    My mom used to cut up the chicken and fry it in her cast iron skillet. She’d say, “Get a good scald on it!!” You sure brought back memories. We ate a lot of chicken because it was cheap. Bless your heart!

    Thank you Ms Lori for frying chicken. It takes me back when I lived on chicken farms in Pilahatchie Mississippi when i first was married. My Grandma in law would go out and dress a chicken whenever someone shoowed up. No one was ever turned away hungry. We had our big meal around noon and leftevers were what we had for supper. Now you take a girl from Cincinnati and put her on a chicken farm...it led for some interesting stories i have 😆😂 but I learned to dress and fry chicken from Grandma.     Smiling here....I remember my Mum would send me out to open the door to the old henhouse and they'd RUSH me...I was terrified...haha...and I'd run, red hair flying, across that yard! LOL Oh, this look's SO good...bring's back memories of Sunday dinners after church!!     Hi Mrs Lori! We buy our chicken and pork from local farmers too. My mouth is already watering at the thought of your fried chicken. A friend of ours gave me a deep iron skillet that belonged to his mom, when she passed. I cleaned off some rust and reseasoned it and it's perfect for frying chicken. I use Italian dressing to marinate grilled chicken but I never thought of using it for fried chicken. And self rising flour, aka Bisquick baking mix, brilliant! Mrs Lori, you got it all goin on in that kitchen of yours!

    This brought back some of the best of my childhood memories. Grandma was from Oklahoma, raised on the farm. Every Sunday after church she would fry up 2-3 chickens ( so we could take some home), a big bowl of mash potatoes with lots of white gravy and fresh corn. Since Fridays were her baking day she always had pies and cakes, all made from scratch. No matter how many times I have tried to cook and bake, it was never as good as hers. I think I should have added more love to it. the recipe because she always loved to cook and bake. You remind me so much of her. Thank you for bringing back the wonderful memories!!     Oh goodness I can almost smell that chicken way down here lol! Showing how to cut up a chicken. What a wonderful skill to teach. One of the best things my mama taught me all those years ago. I don’t like a big bulky chicken either. We do so many things so much alike 😊Probably from being raised in the South lol. That plastic wrap trick is so stinkin smart😂.       We cut them the same in the north...my grandfolks raised chickens. They had lived through two depressions. As a kid I was on survivors benefits so I learned how to economize. I loved how fresh our food in the country was. From garden to table. And I must say that I have no shame when having Thanksgiving at someone else's place when I ask for the turkey carcass. Because I'll take it home and roast until a dark brown then boil all the flavor out to make the best turkey noodle soup with my own homemade noodles. I feel very fortunate to have learned these things, the cooking and canning and growing. I suspect it's more of a southern thing not just for economizing but a longer growing season. At least if I moved south no one would think me nuts for wanting a garden.

    That piece of meat Mr. Brown refers to is what we call the "oyster" here in New England.
    When I save backs for stock, I always rinse out the pockets of blood that you find on both sides of the spine. This gives you a clearer, cleaner tasting broth.

    I also use self rising flour. It’s the baking soda that makes it very crispy. And 10 minutes at 350 f for white meat and 14 minutes at 350 f for dark meat. Marinate my chicken in buttermilk mixed with a whole bottle of frank’s red hot. Yum. It’s a labor of love and the family loves it.

      I'm wondering if adding corn starch to the flour mixture might add more crispness to it? (Chinese restaurants coat chicken in it before frying), but then again why fix it if it's not broken!? I sure do miss my Mama's fried chicken.

    My dear, sweet nona came from Italy. She could fry up the best fried chicken in her cast iron skillet. She just loved America and learned to cook some of our traditional dishes in addition to the dishes she cooked in Italy. We ate lots of chicken backs because they did not cost much. I was one happy girl when she put a big old platter of backs on the table. Thanks for another wonderful video and for bringing happy memories back to me. 🌻

    I am well into my adult life, but cutting a whole fryer was one of the first things I learned! Oh. I grew up in Arkansas btw! It was a Sunday thing for my family. Lol

    First off, great job walking us through how to cut up and fry a chicken. I"ve never marinated chicken to fry. I"ll need to try that. My uncle who was Dad's baby brother (1 of 13) said they always had chicken on Sunday. Daddy use to tell us how Granny made 7 pans of biscuits each day. They had to eat in two shifts.Chickens in the yard was just everyday life. Feeding hogs, chickens, couple goats, and milking the cow all before school. I absolutely love your farm and the farm life with a soft guitar showing Danny checking on things, wearing his over-alls. There is something in my DNA that calls out to that. I tell Janet when I watch a western, or see a Smithy at work I also have that in my dna desire to do that type of work. Also wood, whenever I get around wood like fine hand made furniture, I find myself wanting to feel it. Just like watching your intro and outro, I long to go back to that type of life. I love modern conveniences as much as the next guy, but people are just better people and neighbors living out on farms working the dirt. Well, I did it, got up on my soapbox. hahaha.       @@WhippoorwillHoller interesting you should ask. She grew up on a farm and her daddy was a tobacco farmer. When farming stopped paying off for small time farmers, he moved to town and found a job. She has it in her bones too. I tell her if I was in my forties again, I would find me a place back in the country. Most all my kin folk grew up as farmers with some exceptions.

I've moved and reworked so many houses, and bought so many of the same things over and over, I'm just tired of that. Just lost the fire to go all day and all night. Plus some medical issues.     My gramma used to make the best chicken. She was from AR and TX. Sadly she passed when I was little and never found her recipe. Haha I remember when she used to go out to the yard for a chicken. 🐓 Your kids and grandkids are so lucky and blessed to have you my friend! 💖😘🙏🏻

      My granny done the same thing, she had a sawed off shotgun that stood at the back door, she tried to kill a snake with it, shot the rooster, and put holes in grandpas boat, he blamed my brother, we never told on granny ! Xoxoxo

      @@WhippoorwillHoller My Big Mama used to take a 22 pistol in her apron pocket to the garden and chicken yard with her. She called it a "hawg leg". We used to laugh and laugh every time she said it. I think she said it to make us laugh. She's been gone since 84 and I still miss her.

    I remember my grandmother taking us to the butchers in their small town & that's where she bought All her meat . I remember the floor had sawdust lol & they had can goods & homemade jams , pickled eggs , cabbage , some kind of homemade Pepper jelly or relish , i loved that . Most of the food was in the jars like in your pantry . The eggs were from local farmers & the milk came in glass bottles back then . Ooh , the good old days long ago . Even the old 5 & dime little stores back then was exciting going there . my brother & I would get yoyo's or that round toy you turned over then flip back again & it made a cow or sheep sound . LoL
    My favorit was getting the Paper doll books & bending over the flaps to dress them . Cant forget those Jacks you had to pick up 1 then 2 then 3 in one hand after every bounce lol . I also remember they even sold real seahorses 🐎 & tiny turtles 🐢 , you dont see them anymore . I'm 57 & I think im going to buy me a Journal & start writting my childhood Memories down for my granddaughter to read one day . If i'm going to leave something behind that would be it .
    Lori , my grandmother would make ( chipped beef over homemade biscuts ) can you make that on one of your videos one day ? Lore I know this is Soooo long but watching you & listening to your Great stories , you bring back alot of memories for me . Thank You !!     Cute to know that Mr. Brown’s favorite part of chicken was the back. It was my husbands favorite piece too. Good going Mr. Brown. I also was raised in Ky. And we had chickens. So I know how to cut up a chicken. I showed my daughters how also. I also buy whole chickens. 🐔🐔🐔🐔

    Great video, thank you! I really felt your comment about the price of chicken wings. My wife and kids LOVE my hot wings, but I can barely afford them! In 2021 it's even worse. Yesterday they were $4.89 a lb!! The reason is the hot wing industry. They've driven the price up through the roof. The good news is that there's a million things you can do with the other parts of the chicken which are still pretty affordable.

    Hello! Exactly how I was taught to cut up a chicken! My husband likes the back, too. Love fried chicken for breakfast with biscuits, fried potatoes, and gravy. Like your idea with the dressing marinade. Ought to be very flavorful and tenderized. Y'all have a wonderful day!

    LOL....my Mom always liked the part of the chicken that was last to go under the fence....just like Mr. Brown. We kids always called it the backbone with tail but Mom always said, no it was the last part of the chicken that went under the fence. Brought back good memories, thanks.

    Hahaaha! Just as I was saying to myself, "I'd get my fingers in that flour", you dove in! Tell Mr. Brown that those two morsels of chicken in the back "spoon" are are called the oysters of the chicken. They are my hubby's favorite too. Thank you for the video. You're awesome, Mrs. Brown.

    I just found your videos. I have clicked "Subscribe," "Notifications bell," and "Like" what I see. I am 72, and a lifelong country girl. I married at 18, and since Mom preferred her kitcheen to herself while she cooked, I learned to cook, by watching PBS. (The Frugal Gourmet, The Galloping Gourmet, Madeleine Cooks, Julia Child, Jacques Pepin and others), collecting cookbooks, and of course, much trial and error. I must have learned a thing or two, as these days, everyone seems to enjoy my offerings.
    PS: Butchering, and cutting up chickens, was one thing I did learn as a child.

    I was born and raised in Ohio, the Cleveland area. I moved down to Florida and met my Miami-born and raised husband. His mom was raised in Alabama. She taught me so many of her recipes. I love southern cooking and eating!! Heehee!! Now I say I was yankee born but I’m a southerner in my heart!! Love this video. The new cabinet behind you is pretty. I like the stone wall, too!     Another wonderful video Lori...I love the idea of using the "Ken's" Italian dressing as a marinade for the chicken pieces before frying ....talk about great Flavor!!! Also thanks for the refresher on cutting up a fresh chicken ...many folks dont know just how easy and cost effective it really is!!! But your finished product made me so hungry! That fried chicken looked amazing and I could smell it all the way up here in Bucks County Pa 😋...Please let Mr Brown know that we always called that section of the back bone "the oyster" and it truly is the best part of the chicken when cooked! He really has excellent taste! Thank you again Miss Lori and God bless to both Mr Brown and yourself ❤🍁

    Ooo just in time Mrs Brown. I am waiting for my cast iron to get here. I am sick of these dang useless pans for frying chicken. That is what I learned to fry in was the cast iron.     I’m caring for my 80+ parents and it is so very hard to make things to eat that they like. The other day I asked if they would like some home fried chicken and my mom said “oh just go buy fried chicken. Its cheaper to do that these days.” But I just know cooking it at home is best so I’m going to try and see if they like it. Thanks for your videos and I just love your kitchen and that sink!!     Grandma always use to do this and when she made her seasoned flour (she never measured and she never skimped either) she would use a paper sack, toss the chicken in and and start shaking. She did used buttermilk for dipping and egg so this is a little new to me. I don't know why but her chicken was the best out of everyone else's. For her brine it was just salt water. Nothing fancy so I never heard of the brown sugar method. Thanks for sharing this.

      Been cooking chicken since 11 years old kinda weird to realize others don't know how to cut up fryers like this.
      Last week a friend 58 yo watched me to learn how.
      Never too late to learn I guess. "Winging it" lol... That would be a good name for a hot wing restaurant...

    Watching this video brought back many memories of when I was a child. My mom would go outside and catch the chicken for Sunday lunch. We were country folks and country folks raised their chickens and hogs. We grew the vegetables in the garden. The vegetables were canned and frozen for the winter time. I have seen many plates of fried chicken that we enjoyed on Sunday.

    I miss my Grandmother and watching her cook .She was the one who showed me how to cut up a Chicken .She always used an Iron skillet . Now I will have to fry up some Chicken . My Son watched this video with me and Said " That Lady cooked up some good Chicken . Translation : " When are you gonna fry up some Chicken , mom ? " Hahaha. I will soon . We haven't had any in a while . But as a child and teen and when I had children of my own , we had it on a regular basis at our house . You are inspiring me to cook more , Lori ! Thank you and Mr. Brown . I don't think you realize how many you are touching with your videos. : )

    You've brought back such wonderful memories of my mother standing at the stove frying chicken or rabbit. It was always perfect. I wonder did she ever burn anything? I never saw it if she did. Probably knew whatever she was cooking could not be easily or readily replaced. I'm thinking now, too, if I ever taught my kids how to cut up a chicken. They watched me do it often enough. I'll have to ask. HA! I yelled to eldest daughter in the other room (she's 38), and she hollered back "YES!" Then my 11yo grandson came in the sewing room and said, "That was the most random question I've ever heard anyone ask." Thank you for another great vid. Also, I would LOVE to see how you do your oven-fried chicken. When I was a kid, our lunch ladies made the best oven-fried chicken. I've never been able to replicate it. Pretty sure they used corn flakes. Thanks again!

    My gran would grab a brown paper lunch bag, add her seasoned flour and shake pieces up and add to skillet.👌❤️🙏. So easy and no fiddling around with tongs or forks other than tonging pieces into pan. So dang good! Mmmmmm good. Loved your presentation. Relaxed, soothing voice👍🍽

    Sunday dinner for us was either fried chicken or a roast. Yes, fried chicken was cooked in the cast iron skillet or mom’s electric skillet. Mom-in-law used her cast iron skillet for frying chicken. Of course the drippings were used for chicken gravy for the mashed potatoes. Mmm good! Thank you! 😃

    Reminds me of Sundays growing up. Mom made the best friend chicken. Shoot, growing up we never had pre cut chicken! Watched mom cut up a whole chicken many times. Glad I did, I can do it since I watched her. Thank you for the video.

    Fried chicken and roasted chicken are my two favorite meals ever! My grandmother made the best fried chicken! She said that when she was a little girl ( she lived on a cotton plantation) they had fried chicken nearly every day... on the table with breakfast..

    We call those 2 divets of meat on either side of the lower back the oysters or cook's treat. If I'm cooking, they never make it to the table!!

    My dad was a food inspector in Germany while he was stationed there. He taught us to soak all fowl overnight in a saltwater brine due to bacteria. I was sharing this with one of my elderly neighbors, she said she always soaked hers in a vinegar brine. I tried this overnight with vinegar and salt. It was the best, juiciest, and tenderest chicken I have ever made! My husband loved it! No vinegar taste either. I love your channel Ms Lori! I have learned so much from you! We did the opposite switch! We moved from Arkansas to Texas after my dad retired from the Army! I love Arkansas and miss it dearly!

      @@Srjgal I use about 1/4 cup of salt in approximately 2 quarts of water. For the vinegar use 1/8 cup of salt and 1/2 cup of vinegar. I have a 8qt container that I strictly use for my chicken brine, just do not use metal. I have left the chicken in the brine for up to 2 days. Rinse chicken before cooking.
