  • In the southern part of Croatia, in the peninsula of Pelješac, one winery is taking their love of wine *deep*-75 feet below the Mediterranean Sea's surface. Wanting to combine his two favorite pastimes, winemaker and scuba diver Edi Bajurin built an underwater winery, with custom cages and secure clay amphora that store the bottles for a year and a half. But why underwater? For Edi, the ocean’s “silence” bestows and blesses wine with a certain richness unlike anything found above ground.

    One of those things that people think is so amazing cause it's done different. If wine was always kept underwater when it was first invented and someone thought of the idea of keeping it in barrels on land, people would react to it the same way. I'm sure it doesn't taste better, it tastes different and people sometimes think different is better cause they've been bored of the same taste. What's the next different ridiculous way of aging wine? Keeping it suspended in space? Actually sounds pretty cool lol.

      He is NOT aging it... he just storing it.... for it to be aging the right way it has to be in a wooden barrel... not a glass bottle.... this is just a GIMMICK for suckers....

      okay listen the wine is bottled so it can age and its put in clay so it cant be damage and can be sustaned in the water so he puts in to the glass and puts the clay over so it wont break and he takes it out of the clay and its finished

      NafstaPolarIce actually I am from Croatia, and sparkling wine is very good pulled out of the sea. But I didnt know that sound has to do something with it, it's the pressure and temperature

    Forgive me if I'm wrong, don't got that much knowledge in wine/liquor making however, isn't aging for these drinks only considered aged by how long its been in a wooden barrel casket?
    They say this because once the said drink is out and bottled in a glass bottle theres no more development. Doesn't it have to be exposed to the wooden barrel its sitting in and change taste/complexity over time thus attributing to what is known as aging?
    In the video we already see bottles in glass, and its just being stored underwater.

      you can age in bottle too, the wine is organic so it will grow older and change in flavor, I'm not familiar with the specifics, google it, people do this with beer whiskey etc. as well but its typically done by the consumer since its easier and more consistent for larger manufacturers to age in a batch, such as in a barrel as you mentioned

      sound creates energy as it vibrates molecules. Sound aging of whiskey is also a thing. So I think different sounds would age the spirit differently.

    You know what I'd love to see... An experiment where people blind taste test this wine along with other wine of similar, higher and lower values and really test if people will like his wine more and say it has more flavor.
    People's opinions on taste changes when they hear a price and when they hear its gourmet.

      Jacob Cacho that is just as much bull as the himalayan salt lamps, I would go as far to say he does it for the electricity bill if he needs it at that tempurature all the time. Makes it more cost effective if nobody owns the land

      When he meant sounds. he meant the activities that normally involves moving or transferring the objects to one another. For which it ll cause stir in the wine barrel.
      Much like making a traditional cotton candy hair where ur not supposed to stir the sugar syrup when boiling in the process. Or else you just form a crystal.
      In short, there are process of cooking, baking or brewing where u mustn't stir, otherwise you ll have a different results which is not to ur desirable results
      As far as I know about the wine process. To get a strong taste of wine, It has to be in a place where there's little to no occurrence of stir/shake during the aging process.
      Not sure bout the sea he lives in. Maybe the current it's so calm ya wouldn't notice anything at all. R simply drop on the sea bed without being drag on by the waves.

    0:45 He simply stored bottled wine under the sea, then removes it time later. Liquor absorbs taste from wood in barrels, it doesn't chemically change with glass walls. This seems like a totally lame process.

    You typically barrel age reds and aim to drink whites while they are young. Reds contain more tannins than white since the juice sits inside the skins and seeds longer, while whites are separated juice from the skin quickly. Reds are usually crushed, while whites are pressed. Aging reds allow the tannins, or other suspended substance, to settle making it silkier and less chalky. Whites are usually better young and bright since they don't have as many tannins are more effect by oxidation than reds.

    Technically, with the currents, waves, tidal movements, motorboating sounds and so forth, all suggests that these wines would be more subject to disruption than in a deep stone walled cellar with natural temperature and humidity control, beneficial fungi, and no sound at all. It's just a marketing ploy to edge a "cool" effect for a chance of selling an warranting overpriced and sub-par quality wine. The wines grown in that Croatian region are actually not known to be great on the global market to begin with.
