How to make Pancakes at home... Like a Chef | Sorted Food

  • In this series our chefs show you their methods and cheats for cooking some of the internet’s most requested dishes at home. Today it’s PANCAKES!
    Ben shows us how to make incredible Crepes and big old fluffy American Style Pancakes and shares a pro-tip so you’ll never need follow a pancake recipe again!
    We know that times for all of us are a bit tight right now, so we want to share creative ways to cook at home with leftovers and staple cupboard ingredients.
    FLUFFY PANCAKES RATIO:
    1: Part Eggs
    1: Part Milk (g and ml pretty much weigh the same)
    1: Part Flour (plain/all purpose)
    Salt (+ Pepper if you're going savoury)
    Pinch of Baking power
    1 Tbsp butter for lacing or frying
    CREPES RATIO:
    1: Part Eggs
    1: Part Milk (again, g and ml weigh pretty much the same here)
    0.5: Parts Flour (plain/all purpose)
    Salt (+ Pepper if you're going savoury)

    Just wanted to add to the chorus and say I love this style of video! I've been wondering why my pancakes never turn out as well as I'd like them to. This is such a well-explained method. I know I'll be coming back to this video for future reference!

      Chocolate mousse! Whisk it up with sugar (I started adding a bit of cream cheese and love it), add melted chocolate, fold, bam! Nice dark chocolate covers the chickpea-y flavour that will still be there and be a bit off-putting for some.

    I can barely keep track of days of the week thanks to working every day each week during the pandemic. Sorted is one of the few things that helps me know what day it is. A Friday video damn near fried my brain trying to figure out what day it was! 🤣

    Viewer from Denmark here!
    If you ask for pancakes in Denmark you will get served crepes. And we don't call them crepes, we just call them "Pancakes (Pandekager)". If you want the fluffy kind, they will most often be called "American Pancakes (Amerikanske pandekager"). Most often they're served with caster sugar and some type of marmelade (Strawberry being the most popular), but of course people put everything in them, from nutella to ice cream and so on.
    Savory pancakes are not as big of a thing in Denmark, although you definitely are able to find it.
    We also have Æbleskiver (Meaning "Apple slices" when translated), which is a pancake like creation. A batter much closer to buttermilk pancakes is poured into a special pan (often cast iron) with hemispherical indentations in it. You flip them, and in the end you end up with a spherical pancake, which is often served with powdered sugar and marmelade. Funny enough, there are no apples in them.
    If you had to summarize my childhood in terms of desserts, it would be a stack of pancakes with caster sugar and black current marmelade (Pretty popular marmelade in Denmark)!

    I echo other comments - love this format. I learned a good bit today and I’m ready to try this out. Ben, you are a good teacher. You never sound preachy or condescending. I’ve been watching a year now, and I think this might be my favorite format. And there was a Benuendo! :)

      Free range chicken eggs. If you only ever buy grain-fed, cage raised chicken eggs there's a world of difference between them.

      It is very much the diet and freshness of the eggs. Our chickens’ yolks would get this color when we fed them a lot of carrot or sweet potato. It was a little disconcerting the first time, though!

      I've had eggs from a family friends' farm and they were very vibrant, but nowhere near that orange :0 I'd definitely believes specific diet influenced that

    I love this format. It’s not really a recipe vid but more skill level up video. A balance between the videos that show the difference between a chef and a normal and videos that help normals of all levels bridge that gap.
    Ben is a natural as a teacher.

    Thank you for this recipe! I immediately make the crepes, they turned out really good! I also made a fresh peaches and garden picked blackberry jam to serve on the crepes. For the side, I made scrambled tofu with garden tomatoes. I enjoyed pairing fresh produce from my garden with this recipe!

    The timing of this video could not be better!! After literally YEARS of watching cooking shows and videos, I've finally started trying to put things I've learned into actual action, and cooking meals for myself. One of the things I wanted to learn how to make was homemade pancakes, without a mix! This is so easy, and I can't wait to try it!!
    Suggestions for future videos: Omelettes, risotto, simple pasta dishes, pretty much anything that is a simple meal that only takes a few common ingredients. Especially if they are more common or well known dishes!

    Oddly, this is one of my favourite of their instructional cooking videos ?!?! Everyone wants to know a sure fire way to make great pancakes and crepes. They nailed this in such an easy way to remember and repeated it enough so that it will be stuck in your head for years to come I would imagine.

    Being serious - I miss read the hashtags and thought for a second it said Ikea Chef...
    Also - for gluten free ones, I typically sub out the flour for rice-flour mixed with some potato flour and tapioca flour. Works a treat.
