  • Learn how to make these awesome savory oven-baked sweet potato fries! Lightly seasoned with just a hint of natural sweetness and roasted to perfection, these are simply delicious! A nice change from the normal deep fried french fries.
    What you'll need:
    2 medium-large sweet potatoes
    2 Tbsp cornstarch
    2 Tbsp oil (vegetable, canola, peanut, flaxseed or ghee)
    1/4 tsp garlic powder
    1/2 tsp paprika
    salt and black pepper to taste
    Peel potatoes and cut into 1/2" square sticks resembling fries. Place into a large ziptop bag and add cornstarch. Add in cornstarch and toss to coat evenly. Add in oil, garlic powder, salt and black pepper and toss to coat evenly. Place onto a cookie sheet lined with aluminum foil and space evenly apart. Baked in a preheated 425*F oven for 20 minutes, turn over and bake another 10-15 minutes. Serve with your favorite dipping sauce and enjoy! Makes 2-3 servings. Enjoy!

    Soaking them in water before putting the cornstarch for about 45 minutes makes them crispier. And add the salt after they've baked, salt makes them soggy.

    • @rronaldreagan
      @rronaldreagan 7 ปีที่แล้ว +25

      wrong. soaking them will remove the natural starch they have, making it unsmart to later add even more starch

    Just soke the fries in water for 15 minutes and pat dry before covering with oil and baking - that'll make them crispy. Also: salt after baking!
    And coconut oil goes well with them and you can heat it up to high degrees!

    Thanks for this recipe! I have haloumi burgers and sweet potato fries twice a week. I'm addicted, and always looking for new ways to make the best sweet potato fries. Here are some Pro tips for this recipe:
    1) No need for a ziplock bag, put in a bowl to shake instead. It will save you from buying ziplock bags.
    2) Add salt to the fries before doing anything. Let them sit for 30-60mins, then pat dry. This draws out a lot of moisture for even crispier fries. Proceed with the rest of the recipe.
    3) Experiment with different oils (peanut, vegetable, corn etc) as this is contributes substantially to the flavour profile.

    I have tried probably a dozen or more sweet potato fry recipes, and although my husband and kids are sweet enough to eat them, I have yet to be happy. I can accept that they won't be as crisp as I like, but every time I recipe I have tried, they come out more like mashed fries - that was until I found this video!
    WOW! I've added cornstarch before, but this recipe is the perfect balance of potatoes, cornstarch, seasoning & cooking temperature. I wish I could include a picture because they came out amazing! I have just shared this recipe with my entire contact list!!! Thank you!!!

    UPDATE: MAKE SURE YOU HAVE A VERY VERY SHARP KNIFE! I had a knife as big as his and it was really sharp but not sharp enough. I had potato pieces flying everywhere and my cuts were uneven because the sweet potato was SOOO hard and thick! I didn’t have corn starch so I used a little bit of flour and it worked just the same! They were VERY delicious! Also, I soaked them for 45 mins and dried them off before I put the flour and seasonings on them. Then I put them in the oven at 400 for 25-30 mins. I’ll definitely do this again when I get a sharper knife! 10/10

      Yeah it still tastes really good, just may not become AS crunchy as if you were to use veggie oil, or perhaps there isn't too much of a difference because sweet potatoes are really hard to make super crunchy like regular potato fries anyways so I personally didn't mind.
      I just turn the oven up super high the last few mins of cooking to add some crunchy bits on the outside and they are delish!♡ Just be sure to spray/butter the baking sheet you're using though! :)

    Hey, Jason! DELISH!!! and HIGHLY RECOMMENDED with a few caveats/recommendations. It would be helpful if you indicated how many ounces/pounds of sweet potatoes. Some people's ideas of medium and large are quite different. I made this recipe with a few modifications: 1/4 tsp cinnamon, 1/8 tsp cayenne pepper, 1/4 tsp paprika, all to give a "browned" appearance. Although you don't say when to add the paprika, I think you add it when you add the s&p, garlic and oil. I would be a tad more generous on the oil depending on the # ounces/pounds and I would also spray the aluminum foil with cooking spray prior to placing the fries on the sheet to make for an easier release. FWIW, and thank you for taking the time to do a great video!

      regular olive oil would honestly be fine, it's what I usually use. The issue is that a lot of people don't know that extra virgin olive oil is different and has a very low smoke point comparatively. Olive oil is for cooking, Extra Virgin is for seasoning and dressings.

    • @ThePeoplesElbow2013
      @ThePeoplesElbow2013 4 ปีที่แล้ว

      @J OneLife you can definitely make this recipe and omit the cornstarch entirely, the fries just won't be nearly as crispy. Tossing the fries with oil of your choice and seasonings is a really simple way to make good baked fries with any potato, not just sweet potatoes either. One of my favorites with sweet potatoes is to use peanut oil and cajun seasoning.

    Thank you very much! I just had an epic fail with these before finding your video. Your explanation helped me understand everything I did wrong: I 1) used olive oil 3) Cut way too much sweet potato and everything was too close to each other 2) the individual fries were too small. 4) I didn't use cornstarch. 5) I cooked them for too long. The end result was a half-burnt, hideous (albeit still tasty!) mess! Thanks for the great walkthru!

    CAn you use coconut oil in stead of vegetable?

    • @croutoncrackerjacks
      @croutoncrackerjacks  8 ปีที่แล้ว +32

      The smoke point of coconut oil is 350*F. These are baked at 425*F. From the web: "When an oil is heated past its smoke point, it generates toxic fumes and free radicals which are extremely harmful to your body. When the smoke point is reached, you’ll begin to see the gaseous vapors from heating, a marker that the oil has started to decompose. Decomposition involves chemical changes that not only negatively affect the food’s flavor and nutritional value, but also create cancer-causing compounds that are harmful when consumed and/or inhaled."

      @ddale20 8 ปีที่แล้ว +10

      +Crouton Crackerjacks You can use avocado oil. It has a smoke point of over 500 degrees if you want to use a healthy oil.

    • @Bouchergator09
      @Bouchergator09 7 ปีที่แล้ว

      Afifa M Look at the back of olive oil and coconut oil. Coconut doesn't have Trans fat bc that's man made. But it has a ton of saturated fats, more than olive. It's not as bad as Trans but not as good as unsaturated...

      I use paper bags for any fries. I season, salt then as I shake the potatoes. Always takes of excess oils, and shaking spaces out the spices over the whole bag contents. Remember, tho as you put taters into bags so breakdown seasoning to the amount of taters.
      Metal won't take away the excess oils, so either/or. Depends on how 'wet' you want your fries. Remember, in restaurants they are using 'strainer type' holders to cook, so oils fall out of & off of foods before seasons added in metal bowls.

      If you're using an electric oven, how close is your rack to the element (heat source)? On baking high temp recipes I will always move my rack up to the middle/mid upper part of the oven as the lower element will be burning hotter/longer cycles on high setting. This causes a lot of foods to "stick" or burn. It's not necessarily the temperature but the proximity to the heat source. I've used peanut and corn oil on these for years with good results. They can take the heat. You are exposing these fries to long periods at high temps, the oil has to be able to take it. I have always soaked mine in cold water and dried thoroughly before cooking the fries. I have a gas oven at home (no element) and an electric oven at my cabin (element) and I have to try to remind myself of this!

    One question though...
    Are they crispy?

    • @croutoncrackerjacks
      @croutoncrackerjacks  8 ปีที่แล้ว +2

      They have a crispy coating when they first come out of the oven (that's what the cornstarch creates) but very quickly become soft. That's the nature of sweet potato fries though because they are loaded with water. If you want them crispy crunchy, you're going to have to fry them.

      +Crouton Crackerjacks can I FRY them with olive oil?

    • @ancamg
      @ancamg 7 ปีที่แล้ว

      Unfortunately, olive oil is not good for frying as it has a very low smoking point. He said that O.O is not good in the oven. So use any other oil, grape seed is my choice.

      Start small, add little, as you learn to find the right amounts. Remember you don't always need added salt if you are using seasonings either. Pros do because many work in businesses, restaurant kitchens. More salts, more drink orders.
