D-Grill’s Rotisserie Leg of Lamb Recipe:
Ingredients:
6 pound Leg of Lamb, boneless
1 Cup Extra Virgin Olive Oil
Juice of 1 Lemon, 1.5 ounces Lemon Juice
1 tsp Thyme
Garlic Cloves or minced Garlic, 8 - 10 Cloves, or 4 tsp - 5 tsp minced Garlic
Salt (to taste)
Cracked Black Pepper (to taste)
Baste ingredients:
1 stick Butter
1/2 cup Extra Virgin Olive Oil
1 ounce Soy Sauce
1 ounce Brown Sugar
1Tbs. Cracked Black Pepper
Instructions:
1. Mix the oil, lemon juice and thyme.
2. Cover the lamb with the oil, lemon thyme mixture.
3. Score shallow slits in the lamb
4. Put garlic into the slits.
5. Shake some salt over the outside of the lamb, but don't overdo it.
6. Rub cracked black pepper over the exterior of the lamb.
7. Begin to cook on the rotisserie at 275° - 300° F. indirect heat.
8. Just after starting the cook, heat and mix Baste ingredients.
9. Bastes the Leg of Lamb every hour.
10. Check meat doneness after 2 hours, then every 30 - 40 minutes after that.
11. Cook till your desired doneness, check meat temperature for safety:
• 120° F. Rare (about 2 hours)
• 130° F. Medium Rare
• 140° F. Medium
• 150° F. Medium Well (about 3 hours)
• 155° F. Well Done

That meat should have cooked longer...You was chewing for a minute or two because it was not well done...
Uh, nobody cooks lamb to "well done" and that certainly wouldn't make it tender. It was fine, but you do your thing.
