  • In this video I mentioned leaving a 1 inch head spacing for the tomatoes, however it should be a 1/2 in head spacing. After the jars cooled, I turned them upside for a minute to allow the water redistribute throughout the jar. Easy Peasy!

    I set my dehydrator up at the same time, and place my skins on the trays and all is done at once.

      My dehydration station:-) is set up outside! I make my own version of Jane's crazy mixed up salt. Minus the salt! But the thought of how many tomato skins it would take boggles my mind!🙌

    Wrap a small hand towel around the center jar and it will keep it from moving around so it won't dance around.

    As for as the snakes go, my parents always told us to put SUPHER AROUND YOUR HOUSE, 'cause they can't stand the smell, therefore, ALAS, they find other places to dwell. I was small, but still remember. Since, when I started my adult life, it still worked for us. GOD BLESS YOU AND YOURS IN EVERY THING YOU DO.

    I purchased a water bath, and a pressure canner. Found the jars at Walmart, and lids; I kept going when they were about to stock the shelfs, it differs from each Walmart. Now I need the courage to DO IT. Mrs H. thank you for sharing your God given gift/talent with us.

    Love diced fresh tomatoes with okra and diced onions boiled together. So good as a side dish. I know some folks don't like boiled okra but I do. Yummmmy

    One of our favorite meals is rice, diced tomatoes with an egg on top! I know it doesn’t sound good but honestly the mixture of these flavors are out of this world! I like my egg with the yellow runny. Put that egg on top of my rice and tomatoes and yum yum!! I just layer it. Rice on the bottom of my bowl, then spoon tomatoes on top of the rice and the egg goes on top. Try it one nigh when it’s cool and you don’t want to spend a lot of time in the kitchen. 👍

      Try cooking your tomatoes in a flat wide saute pan, then drop the eggs into the simmering tomatoes uncovered 2 minutes, then cover and let them poach directly in the tomatoes. I love cooking it this way with olive oil, a little sliced onion in there. I usually eat with a rustic bread, but I'm def gonna try it over rice now.

    I tried to do my first pressure canning yesterday. Never got the steady stream to come up the center enough. It kept spewing up around the pop up lock. I got nervous and shut it off! I watched a few videos... one lady's took 16 minutes to get the big stream of steam and I saw her pop up spewing steam like mine. I thought, dang, I just didn't wait long enough, and I am at a higher altitude. Going to try again today! WHY IS THIS SO INTIMIDATING? 😉
    No, I did not practice with water in jars because I don't have extra lids! I just put my pot of baked beans in the fridge, not completely done. Will reheat and start over.

      Once you run your first canner full you will feel more confident - just follow tbe instructions and dive in! You can do this!

      You can do it! First time is always challenging! You won't blow up your house. I just canned some beef bone broth. I have a ceramic flat top and I put it on about medium-high to get the boiling going the once the valve pops up, the weight goes on, and the pressure starts going up, I turn it on low.
      The most tedious thing about pressure canning is keeping an eye on your pressure gauge and making sure keeps on a constant level. I can't wait until they make electric pressure canners that can can quarts, too. I know one of the newer Instant Pots can can pints. Good luck 😊👍

      @@fourthchute Thank you for the encouragement! I am hoping it was just I didn't wait long enough. I got scared when I saw the steam come up around the pop up plate. I can see around the pop up itself, but this is the seam. I will try again today. Fingers crossed!

      @@joanies6778 don't be fearful. The canners today have safety features on them that weren't there in our grandmothers time. Just follow instructions and you will do just fine. Get it done once or twice and you will be amazed....and addicted to pressure canning! You can do this!

      I'm at almost 5600ft so I'm supposed to get to 1300lb,but my presto sits at 1400 ( steady and safe). Last year I canned without a gaged canner! Boy it was nerve racking!!! But taking a deep breath and just letting the process go using restraint and patience and that was really important ! Patience don't rush! I know you sat with you chair in front of the stove like me! My gage is marked with a permanent marker at the edge of it at just the sweet spot so now I can fake being calm from across the room without jumping up every two minutes.The canners previous owner did that for me! After two years I'm still new,too!!!
      Start that puppy up and get it going! I have an electric stove. I put that setting on an 9 for about 10 minutes then at 8 that usually takes another 8 to ten minutes to get that steam going hard then after it is steadily streaming set that timer for 10 minutes to get all the air out then place that weight on . I drop my heat to a 6,gradually lowering my heat til i get stable at about 3 it takes about 12 to 15 minutes to reach that goal of 13.5 before the processing time can start. If you have no gage,Watching that temperature so your weight jiggles with just a few adjustments. You cant take chances. You cant cut the time .Its not a race for speed but endurance!!! So exciting!!! Be fearless!!!!

    If you have one of those big turkey fryers you know for deep frying turkey's. fill it with water and blanch all the tomatoes at once.

      You can use your pressure canner as a water bath as well , just don't lock down the top lid as you boil and add at least an inch of water over the top of your jars .

    I am new subcriber today. When l was younger l did my tomatoes like you, except l put onions and green peppers in mine, l did pints. I loved them. But at almost 77 this month l don't think l will do them again in this life time. But l really enjoyed watching you. It brought back many memories. Thank you!
