  • Pancakes of the 16th-early 19th centuries were sometimes rolled up like here. Other times they were laid flat like modern pancakes. However, pancakes of the past were always very thin. Almost like modern crepes. Pancakes didn't become fluffier until the early 20th century. Pancakes are one of the oldest foods still eaten with a history going back as far as the stone age 30,000 years ago. Pancakes of the past were usually eaten with just sugar or fruit preserves. The first recorded reference to putting maple syrup on pancakes dates to the 1840s.

    I remember my grandma making real pancakes like that when I was a kid an my parents would always make them for me an myb siblings an I still love eating them that way. I think they are so much better then the fluffy kind.
    My grandma also use to make potato pancakes as well.

    Here in Sri Lanka we call them "coconut pancakes" and they still look pretty much the same. We usually put 'pol pani' (directly translated to honey coconut) in the middle and roll it up. Delicious!

    Those look like the Danish pancakes that my great-aunt (who was 100% Danish) made for me. Not served with syrup, but served with jelly.

      I am hungarian and we still do exactly like with jelly or nutella or cream cheese vanilla cream . If you don't put in sugar just a litle salt fill up with prepair spinich and cheese and put it back to the oven for a cuple of minute

    ‘Pancakes looked awfully different in 1816’
    I’m going to have to Google ‘American pancakes’ because the only pancakes I’ve ever had all looked identical to the pancakes you just cooked! We have them every year without fail on Shrove Tuesday and maybe about a dozen or so times through the rest of the year. I love mine thin with sugar in the centre and then lemon juice squeezed across. I’m making myself drool here 🤤🤤🤤

      Our pancakes are flat and thick/fluffy. Usually served with butter and maple syrup.

      American pancakes are usually made with baking powder so they rise and become fluffy.

    I have a very similar French receipt (from the early 1700s) for crepes. I wonder if it was brought to the 'New world' and adapted???? Thanks Justine, I am definitely going to try this one!

    I am a trained open hearth cook with experience in 4 of the kitchens at the Genesee Country Museum in Mumford NY. I began working in a cabin with an open hearth using a lug pole. I have beeen cooking for over 35 yrs. My longest adventure has been at our county fair in a house built in 1810. The open hearth and beehive bake oven are like old friends to me. My question for you is how do you decide whether to use todays staples or try to obtain more authentic ones? Your channel is exceptional. Thank you for your attention to detail and your commitment to history.

    I’m working at a living history museum set in the 1820s-1830s and mine and the other interpreters’ favorite recipe so far (we use receipts from the time period) is for “batter pancakes,” which are basically crepes with cinnamon and nutmeg. The best part is that this region has a long French cultural history, so it’s extremely likely that people were making them here 200 years ago just like we are :)
    ETA: this region also has a long history of sugar maple tapping, so there are also a couple of references to putting maple syrup on them as early as the 1810s, which is wild.

      When I was a little girl we visited Plymouth Plantation up in Massachusetts and it was so much fun interacting with the "Pilgrims", we would ask them about a modern thing and they would pretend they didn't know what that was. I bet you get that a lot as well lol

      I also work at a living history museum covering immigration in Ireland and we have an American part of the park. We cover 1818 onwards to late 1800s and show what life was like for Irish immigrants when they first got to America. All we get to cook is cornbread, succotash, and apple butter. I would love more items we could cook over the open fire to to become more authentic in our narrative.

    I love this so much : this reminds me of a movie I use to watch all the time as a child . It was “ Hansel and gretel “ live action film made in the late 80s . And Hansel and gretels mom was cooking in a kitchen just like this making a blueberry custard ! Before the donkey came in and kicked it over !

    I just discovered your channel and I love it! I wonder if this is your usual life or just acting. I am very attracted to that natural, simple and calm way of living. It reminds me of spending summers with my grandparents (they lived in a house in the mountains and really seemed to live in another century).     I simply LOVE hearing the birds outside during your pancake video! What you are making is what my Mama called French pancakes…not crepes…French pancakes and that was because my mother’s people were actually French. My great-grandparents, all four of them on my mother’s side, immigrated to the United States from France, around 1870 and, I believe my mother was around all of them for a small portion of her childhood. Her parents both spoke fluent French but would not teach my mom or her big sister or four brothers to speak French because they wanted to be American. I always loved my mother’s French pancakes…she spread them with butter then either sprinkled sugar on them or spread them with jam or jelly before rolling them up. I continued the tradition with my seven children…..French pancakes are DELICIOUS even if you call them crepes. You are doing a great job and I love your channel.

    Oh wouldn't they taste great with lemon custard later known as lemon curd!
    "It is believed that the lemon custard that came to be known as lemon curd was first prepared in England by Protestant Quakers during the 18th century and that the recipe travelled to North America in 1774 with the Quakers or with the Shakers, a breakaway sect of the Quakers."

    Watching a lot of Townsends, TH-cam recommended me to watch this and here I am. I really did enjoy this tutorial of how pancakes were made during this time period. It's always interesting to see how much of the older techniques are still used today but slightly modernised. Really would like to try this for myself. I'm subscribing, now he can get more carrots.😆

    High class food if cinnamon and lemons available. and no measuring ! I have an old Mennonite cookbook doesn’t list flour in the recipes. And directions say “ take enough flour to make a soft dough and mix in the usual way” lol

    that hard sauce is the best for bread pudding; awesome looking crepes serve those up with scrambled eggs and toast. looks like Ron needs to fill the wood box lol another soothing video thank you Justine. cheers

    I loved this video. I never heard of crepes until I married my beautiful wife in 1972. She made them with powdered sugar and fruits on top. Loving blueberries, cherries and apples this made them even better. They have replaced pancakes in my home.
    I love your rooster! Wish I had one too.

    Great video. love the "kitchen' sounds with the birds in the background. So.... cream + lemon rind (zest) creates Buttermilk. Ill try this at home this weekend. Same cast iron (the only pans I have) but propane instead of coals. Thank you.

    Adding a little brandy sounds great! I'll bet they'd also taste wonderful with lemon curd or blueberry preserves. I'm gonna try this out.

    I just happened across your channel this morning. It reminds me of a documentary I watched a few years ago about the Great Smokey Mountains Pioneers. They (and you) are a whole different breed of women compared to the pampered women of today (myself included). I can't imagine having to start supper before the sun comes up on a wood burning stove or fireplace in the middle of 100+ degree August summers wearing those blistering dresses. And that's after collecting eggs, fruits, vegetables, and milk, slaughtering and cleaning supper's chicken and cutting firewood. If I wore a hat, I'd tip it to you M'aam. Now, I'm taking my lazy self to the kitchen to turn up the a/c and nuke my coffee. When I'm finished with those grueling chores, I'll be returning to the couch to binge my new subscription. And yes, I LOVE your rooster teapot. ;-)

    We experienced rain last night (in July, in Dubai!!) and I really fancied some pancakes after walking in the rain for an hour. I came home, whipped them up and was sat eating them within 10 minutes. The convenience of modern day cooking isn’t fully recognised until you watch videos like yours! Thank you for another interesting watch 😁
