  • Here is a simple and delicious way to make creamy one bite sized deviled eggs. When making deviled eggs for a large group or party, I like to use medium sized eggs. It's a great way to make more and budget at the same time. The ingredients can be substituted or adjusted the way you like. PleaseSUBSCRIBE for more recipe videos.
    INGREDIENTS
    6 medium sized eggs (Large can also be used)
    1/3 cup and 2 tbls Mayo (adjust to the consistency of your choice)
    1/2 tsp Spicy Brown Mustard (or yellow mustard)
    1/4 tsp cajun seasoning (or paprika and salt to taste)
    dash of onion powder (optional)
    a pinch of sugar (optional)
    1 ziploch baggie
    TIPS
    **Use at least week old eggs for easier peel
    **Use room temp eggs for best results
    **Bring water to boil, cover with lid and remove from heat, allow MEDIUM eggs to set for 12 minutes, LARGE - 15 minutes
    **Drain hot water and let eggs set in cold water for 10 minutes

    Love the baggie idea, been using that method for awhile now and it definitely makes it easier and once done, toss it away. And also, if you like green (Spanish) olives, put 1 in the bottom then pipe the filling over it, it's really good and provides that salty taste without having to add any extra to them. But great video as usual, keep up the good work

    Love this! Instead of sugar, though, I like to use some lemon juice and Worcestershire sauce. I also like to garnish with paprika and a green olive...makes them look pretty even though I know many people don't care for olives. I also use dill and sweet relish.

The video is well lit, good audio.. good explanation of steps as you went along. I love all your cooking videos. There are several ways to boil eggs and they all work. I have tried different methods. I used to do it exactly as you have done here. Then I tried the steaming method where I bring the water to a boil and then put my folding steamer and eggs in the pan, and steam them for about 12 minutes, then dump the eggs in ice water. I have also found that when I am in a hurry and can't find my steamer that I can put just a little water in the pan, maybe 1/2 inch or so and when it boils add eggs for about 10 or 12 minutes then the ice water. I think that is sort of like steaming. The reason I like the steaming method is that they always, always peel so easily. But I am looking for a better filling. mine are too bland.

    This reminds me of the late 60'ies to early 70'ies of the past century, when this was a popular starter dish in Germany called "Russian eggs". Those who could afford it back then put caviar on them, most who could not simply left it out. Now I am seriously considering preparing them for my 60th birthday dinner 4 days from now, but there are soooo many other things to do ... so I don't know yet.

    Where are the diced sweet pickles? LOL. Sorry that's the way I make them. Interesting take on deviled eggs. Never thought of using med or even small eggs for deviled eggs. I guess because we always buy large and deviled eggs are rarely planned around here they just happen. Of course todays large eggs are the size of medium eggs from when I was a kid in the 60/70's. Gotta buy extra large to get real large eggs these days. Especially if doing recipes from prior to the mid 80's.

    My eggs never peel right. I have used baking soda, salt. For a while I did have some luck, but lately it has been a disaster. I will try this with old eggs. How old like a month? Floaters?? Yours did not float so I do not think that old. I am actually getting downhearted by this. Your food always looks AMAZING.

    • @redhotsweetpotatoe
      @redhotsweetpotatoe 6 ปีที่แล้ว +1

      I know you weren't asking me but please, please don't eat eggs that float. They are no longer good. And if the egg stands on end in the water, it needs to be eaten within a couple days.

      Home grown unwashed eggs can be left on the counter for about a week to make them “old” and easy-to-peel hardboiled. For grocery store eggs I keep them in the fridge until the “sell by” date to hard boil.
      But _never_ use a floater. Hope this helps.

  • @philipmcgee5202
    @philipmcgee5202 4 ปีที่แล้ว

    No, no, no....... Jezzzzz... Start with refrigerated eggs.... slide them into boiling water for 10-15-20 minutes. When cooked slide them into an Ice Bath. Lest them set in the ice bath for 20-30 minutes.... Older eggs are OK but you can use any egg old or new. The key is to break down the membrane between the shell and the egg. You do this by rapid temperature changes! Trust me on this one, I am a southern cook of 40+ years and a retired training professor. The rest of your instructions are OK.
