Some people use tomato sauce in place of the béchamel sauce. You have to flavor your tomato sauce with garlic, onions olive oil etc like you would for spaghetti.
I love it but I am not a fan of the nutmeg...otherwise I like nutmeg in sweet dishes! I'll make it without . Some good baguette goes great with this dish :)

Made this today and it came out like liquid; not thick like shown here. When I added the salmon eggs at the end, they just sank to the bottom. Disappointed to say the least.

Here in America the only thing I ever used salmon eggs for was fishing bait. Now I'm wondering where one would buy "food quality" salmon eggs.
specialty shops like Dean and Deluca sell them as well as Asia markets around the section where they sell sushi grade tuna and salmon. Good luck
