    Great job CJ as always! Totally agree with the not wasting pellets. I think 2 to 3 hours or 160° is about all the slab of meat can handle. I’ve wasted too many pellets in the past after a wrap. Next hunk of meat I smoke I’m gonna finish off in the oven.👊🏻🍻

    Hi CJ, I want to snake a brisket but I only have a bbq charcoal grill, what can I do to turn it into a smoker. Thanks for sharing your recipe I’m glad I can only do 1/2 of a brisket,

      Nothing wrong with finishing in the oven when wrapped, saves wood/pellets and you dont have to manage the temp.
      Dont be a smoking zealot, no one likes a gate keeper.
