    I've been a Kansas City barbecue chef for 20 years if I were to give any advice I would say probably a little bit too much spritzing you only want to Spritz after the bark is good and set secondly when you're wrapping that brisket if you would put those papers side by side you could wrap the whole thing without double wrapping thus double insulating and affecting cook time also smoke penetration. Third I love the rub you used I use it all the time on ribs and pork butt but it definitely is a pork rub you need something pepper heavy with salt and garlic my favorite brisket rub thus far is the chupacabra brisket magic with a little overlay of SPG. Last thing don't ever slice the brisket it leaves edges and points to catch extra smoke and burn then when you slice your shirt to have a brown spot intruding into your beautiful brisket slice you should be able to easily tell which way the grain is running by flipping the brisket upside down and just looking at the flat.
