Try to buy the complete edition which will include 2 awesome DLCs too. I don't think Witcher 1 you would be able to enjoy since the graphics are very old and the gameplay mechanics is an acquired taste. Witcher 2 is still good. I think Witcher 3 complete edition and Witcher 2 separately should be adequate. I would say wait for Steam's winter sale which will happen on 19th to know which would be cheaper for you. Irrespective of what you buy Witcher series has beautiful storylines and multiple replayabilities.

No subscription required if you buy the license from Steam or Epic. It is a one time purchase then.
