In my immersive portals world, I used a portal that turns gravity sideways to dig my mineshaft. You dig "forward" to go straight down, then you can branch to the sides from there.
There is also a mod to make it all work in survival, though it needs some work and you have to have cheats on or the portal wand doesn't work.
Theo messing with language packs and NOT picking the upside-down one. Excellent.
