Scott, have you tested the antenna and done a VSWR and return loss test on it. It may be that excessive reflected power has damaged the power stage! You say that one is only 3db down ... that's still only half the power!

.. glad to check this before purchasing ... I had failures on my previous HC-12.. should I expect the same on these on 5v?

I think it failed because of a poor quality antenna, it is the only failure I have had and I use about 16 of the things

The center pin on the SMA socket looks like it needs reflowing.

This alert is not related to your module, but EBYTE has changed production with no advice, of ML01DP5, that now they call 10382 or similar, claiming that is compatible.
It is not, causing a lot of troubles to devices based on this module, and equipped with genuine ones.

can i disable the encryption system of Ebyte LoRa module in order to communicate with other devices ?

No idea, probably best to use a different kind of module of that is what you need to do.
