Maisie Williams is a huge Ed Sheeran fan, so Ed Sheeran's cameo specifically in a scene with Arya was kinda like a surprise gift the cast threw for Maisie.
I basically just assume that Arya pranking Sansa with Littlefinger's face happens off screen. Arya is just the type to tease her sister like that. Remember the story Sansa told Tyrion about how Arya used to put sheep dung in her mattress and then sewed it up making Sansa's bedroom smell like shit? :) Also, fun easter egg -- remember where Arya finds the scroll that Littlefinger hides in his bedroom at Winterfell in episode 5 of season 7? Ha!

Honestly, one of my options for an ending of the show it to actually let the Night King win, it would definitely be a twist, and people would be so pissed. But imagine, the end, the Night King is sitting on the throne, he takes off his face and boom, it's Jaqen Hagar.
