Those are Mussels not oysters. Pearls are farm raised, not natural. Pearls are dyed and inserted in the new shell. Shell interior determines the color.
If u use the shucker and cut the meat inside they just pop open ... When u get inside use the shucker in a soft cutting motion inside it will cut the meat holding the shell together

When I open oysters i first use scissors then hold it seam side up, helps to open them more easily. I just opened 3 oysters and got a big bubble gum pink which was the color I wanted. I also got a silver and a cranberry.

I sell them as loose pearls :) I don't ever have them sitting around for long because some people prefer not to have to shuck the oyster so they just buy the pearls.
