Love when you cut the end bit off for the ' easy rolling ' but didn't discard it but put the end bits in the middle and you left the call to prayer in ... I'm not a Muslim but the sound always makes me feel an intense yearning. Sending love from Scotland 💓

Thankyou very much. I'm going to make a few of these for sure. I love the Bosnian version of cheese Borek that is rolled up like snails. I have made my own thin pastry for this but it is very hard for an Australian to do this on her own 😅. Need lots of hands around the table to stretch it. I just saw your method using the circle of pastry and then cutting it into quarters then rolling it into snails. Much easier.
I love Borek! I have only tried Balkan style because there is a large Balkan population in my city in Canada but I love beef and cheese fillings. Thank you for the great variety you shared. I want to try the rose borek. I love the idea of the smaller size 😍

İn my family favourite börek iş with spinach and beyaz peynir. But after shaping this börek İ always put maden suyu and wait 1 hour, after bake. And also pacanga börek by your recepie🤗

Assalamualaiqum. I like to know more about sahleb or sahlep…. About the orchid root or something. I had cough when i was there last November. After a cup of sahleb, alhamdulillah my cough is gone. Same thing happened to my son.

Hi, I dont know the yufka kinds in your market but try to get thick simple yufkas for it. It could be round of you can also make with rectangular phyllo. It is interesting that she doesnt give you the recipe. Is she Turk? anyway no worries, you got me 🤗
She is Turkish yes, and she is a wonderful, kind and generous woman. But the Turkish ladies I know seem to want to keep their borek recipes a secret. Another lady, one of my Turkish abla (that is also a great and lovely person) gave me some special tips for borek and asked me not to tell anyone. She is famous for her borek. 🤭 I really wish to understand the difference between sac yufka and gunluk taze and all the other yufkas for example. This is embarrassing but I have 10 years trying to make a good borek and still cannot. Kisir? Easy! Cilbir? No problem… it’s borek that I can’t figure out.

Yes I use maden suyu (natural mineral water) for time to time in some recipes 👏🏻

In albanian areas we use gjizë or farmers chesse instead feta chesse
