Chicken pot pie/meat pies in general are also popular dishes all over the Caribbean. Nice choice Ro! Also, if you want chicken that won't be as stringy and dry, use chicken thighs instead. Thighs are dark meat and have a higher fat content, which makes them good for things that have a long cooking time, like soups, stews, and pies.

Shamlika Hariprasad pie crust is pretty much just flour and fat. you can make it with all butter instead of shortening, but the crust will be very flaky, difficult to handle
