I liked your tip about keeping the dough in fridge overnight. My mom used to use all ingredients dried in sun- kothmir, green chillies, garlic, ginger, dry coconut and even the sabut garam masalas. Except for garam masala everything was hand crushed into the mix. These lasted very long. Sometimes she sealed the cut pieces with thick batter before dropping in oil so no stuffing escaped.

मस्त लागती है, लेकीन फ्राय करते समय बोहोत मसाला बाहर आया,हम वडी बंद दबाके बंद करते है ओर स्टीम करते है थंडी होणे पर फ्राय करते है,ओर मैदा नहीं लेते सिर्फ चना पीठ
लेकीन अटा चपाती जैसा थोडा सक्त तो वडी बंद भी इझी होती है, झटसे बनाते है👌👌👌👌
